Today I come to you with a recipe for a simply mind-blowing strudel filled with salmon, spinach and cheese. Minimal dough and maximum enjoyment;) lots of juicy, flavorful, hearty toppings. The dough will be stretched, and you can take absolutely any filling. It's very simple and quite fast! Join!!!

For the pastry

  • Wheat flour / Flour - 185 g
  • Chicken egg - 25 g
  • Water - 90 g

For the filling

  • Salmon - 350 g
  • Spinach - 100 g
  • Hard cheese - 100 g
  • Butter - 50 g
  • Breadcrumbs / Breadcrumbs - 20 g
  • Salt - to taste
  • Black pepper - to taste

How to cook strudel with salmon, spinach and cheese step by step with photos


All very easy and fast. Sifted flour. Fresh spinach, already shredded. Shredded cheese too. Warm water.

I mix the flour with the salt, egg and water. I knead a smooth, homogeneous dough. As dense as dumplings.

You may need a little more or less flour. But don't rush to add it all at once. Knead more and more as you go along. It takes a long time to knead the dough. You can even beat it on the table.

This is how soft and elastic the dough is. It's not sticky at all. Knead for 15 minutes.

I will thaw the dough the warm way. The container in which the dough will be heated in the microwave. It is also possible to put boiling water on it. But it seems easier to me with a microwave. I grease the container and the dough with vegetable oil. I cover it with a towel and leave it for 30-40 minutes.

Meanwhile I prepare the stuffing. The spinach reduces VERY much during the stew. If you like it, feel free to put more. In a small piece of butter (of the total quantity) stew literally 2-3 minutes. You just need to boil away all the liquid. And don't forget to salt and pepper to taste.

I cut the salmon into little pieces. I also salt and pepper to taste. And the filling's done.

The dough will be drawn. The easiest way to stretch it out is on a towel, in my case, a tablecloth. I dust it well with flour.

And I start pulling the dough from the center to the edges. With half-clenched fists, hiding my nails so as not to tear the dough. I did not grease my hands.

Or you can just pull the dough in different directions, but try to give it a rectangular (desired) shape at once.

It's no big deal if you make a few tiny holes somewhere. And the edges of the dough can be trimmed.

Unfortunately I did not measure the final size of the dough. But as you can see, it is thin enough and through it the pattern of the tablecloth is well visible. I smear it with melted butter. I only leave a clean edge where the filling will be. That's about 15 to 20 centimeters. on either side.

Sprinkle with breadcrumbs...

And with the help of a tablecloth start to roll.

As you can see it's easy enough.

Fold up the edges. Transfer to parchment paper. If you're not sure of the quality, grease it with vegetable oil. And transfer it to the baking tray. And grease with melted butter. You can sprinkle with sesame seeds if you like. And I send it to a preheated oven at 170-180 degrees, for about 35-40 minutes, but it is better to be guided by your oven.

Here such ruddy beauty should turn out.

And while it is still hot grease it with melted butter. And it is better to let it cool down a little, for the filling to stabilize.

And our strudel is ready to eat:) It's hard to wait for it to cool:)

It goes really good with fresh sour cream sauce and dill.
