I want to share my recipe for samsa. I should stipulate at once, not in any way do not claim to be an original samsa, therefore, do not cling to the "originality". I make samsa on simple puff pastry. I've tried other recipes, but settled on this particular dough for samsa, for some reason I like it best.

Ingredients for samsa with lamb:


  • Wheat flour / Flour - 500 g
  • Water - 1 glass
  • Lamb - 250 g
  • Fat (turkey) - 90 g
  • Chicken egg (one for dough, one for greasing) - 2 pcs
  • Onions - 2 units
  • Vegetable oil - 60 g
  • Salt - to taste
  • Black pepper (ground) - to taste
  • Zira - 0.5 teaspoon

How to cook samosa with lamb step by step with photos


We need a very simple set of products. For dough - Flour, egg, salt, water, vegetable oil. For stuffing - Lamb, sheep fat, onions, salt, pepper, zira, cooking oil.

Make dough first. Sift flour. About half a kilo of flour per glass of water.

Pour salt in bowl.

One egg.

A glass of water.

Stir everything.

Then we slowly start to add flour, for acceleration of the process at the initial stage we use a mixer.

Continue adding flour.

When the mixer stops, we use our hands.

We knead stiff dough, a little weaker than for dumplings, as a result we receive here such charm.

Now we put the dough into a bowl and leave it to drain, for about 40 minutes. Let's not forget to knead it at least once, about 20 minutes later. It can also be left in a bowl and covered with a film.

While the dough is resting let's proceed with the filling. Over many years, I have worked out certain proportions for myself. Namely, I divide mutton and onion equally, and chicken fat about 30% of meat. Well, spices are standard for samsa - salt, pepper, zira. This is for my taste the perfect stuffing, although, as they say, it's all IMHO. Here we go We need minced meat, not chopped. minced meat in the samosa is much less delicious. Of course this all is IMHO, but I still recommend minced minced meat...

The stuffing came out 237 grams.

We cut the veal into small cubes.

Then the onions. Alright, we are ready to assemble the stuffing.

Put everything in the pot, salt...

We grind in a mortar half a teaspoon of zira, not too much, just a little bit.

And into the stuffing.

After mixing the filling we add a little vegetable oil, 35 grams.

Knead it well, and leave it to stand, to marry, at least for half an hour.

While the stuffing is marrying proceed to the dough.

To begin with we knead the dough with our hands into a pancake.

Next, using a long rolling pin, we roll it out into a large and thin sheet. Don't forget to sprinkle it with flour so it doesn't stick together.

That's it, carefully.

In the end we get a sheet like this.

We put oil on it, not too thick. with oil, not too thick, within reason.

Spread the oil thoroughly on the whole surface.

Begin to twist it into a tube, twisting it tightly and carefully.

Then we fold it.

And cut it into desired pieces.

We flatten the pieces.

And we roll them out.

Well, everything is ready for the samosa.

Let's start making it. Put the filling in the middle, do not spare, a tablespoon with a handful.

Now separate the yolk from the egg, add a little water and mix.

And we send it to the preheated oven. 200 degrees a time of about 20-30 minutes, depending on the oven.
