For a long time I've been dreaming to make a cheesecake with a sour filling topped with jelly, but somehow I couldn't find a solid recipe. And for my husband's birthday I really wanted to bake something new. I searched the Internet and assembled a recipe. It turned out very tasty, and my husband thought it was delicious! )))

How to cook curd-currant pie "sashke 27" step by step with photos

Stir in butter and sugar. Add 1 egg and 1 egg yolk and mix together.

Add flour. Knead the dough. The dough is soft and easy to knead. Add a second cup of flour little by little, making sure the dough does not become crumbly. Once the dough stops sticking to your hands, it is ready. If you do overdo it, don't worry. Just add a scoop of milk or egg yolk and the dough will be soft again! And don't knead the dough for a long time, or it will turn out hard.

Then you need to distribute the dough in the form (I have a mold with a diameter of 28 cm.), making sure to line it with a rim. The rims can be pierced with a fork, it looks very nice! Prick the dough with a fork and leave in the fridge for 30 minutes. By the way, we do not need to grease the cake pan, because. к. The dough is already greasy.

Pour the cottage cheese into the blender, add 1 egg and the rest of the egg white, add the sugar (4 tablespoon) and vanilla sugar, add 4 teaspoon of starch. Mix everything well, until a homogeneous mass.

Preheat the oven to 180 degrees. And put the form with the dough for 15-20 minutes in the oven. Meanwhile prepare the jam. In 2 tablespoons. Add 4 teaspoon of starch to the jam.

Take the dish out of the oven, let it cool a little. Then grease the jam.

Pour curd mass on top and put in oven for about 40 minutes.

After the dough has browned well, and the cottage cheese has baked too, we take the pie out of the oven and send it to cool.

While the cake is cooling, we need to prepare the jelly. Pour cold water over gelatin (approximately 50 ml) for 15 minutes. Pour a glass of boiling water over 1 tablespoon of jam. In a saucepan or a ladle put mixed berries, fill with sugar and pour the jam poured with water. Place on low heat. Bring the berries to the boil. Turn off the heat and add the soaked gelatin. Stir until the gelatin has dissolved, then let it cool to room temperature. (For this, I poured cold water into a small bowl and put a ladle of water in it.)

Place berries without liquid on the cooled cake and send to the refrigerator. Let the liquid cool. When it starts to set, but is still liquid, pour the liquid over the pie. Place it in the refrigerator until it sets.
