Ingredients for pie "saturday" with onion sauce:


Dough

  • Wheat flour / Flour - 200 g
  • Yeast (dry quick) - 0.5 teaspoon
  • Water - 100 ml
  • Vegetable oil - 2 tablespoon
  • Salt - 1/4 teaspoon
  • Egg yolk (to grease the top of the pie) - 1 pc

Filling

  • Cheese curd (creamy) - 100 g
  • Leek - 150 g
  • Pork (boiled) - 170 g
  • Sweet pepper (200 g) - 3 pcs
  • Hard cheese - 80 g
  • Salt - 1/2 teaspoon
  • Butter (for frying leeks and peppers) - 30 g

Sauce

  • Butter (30g for Béchamel + 20g for frying onions) - 50 g
  • Wheat flour / Flour - 30 g
  • Milk - 300 ml
  • Onions - 250 g
  • Dill - 1 bunch.
  • Salt - to taste
  • Black pepper (ground) - to taste

How to cook cake "Saturday" with onion sauce step by step with photos


I prepare and measure all the products I need. For making the pie and sauce I use Butter TM "Ekomilk" 82,5%.

I make dough. I dissolve yeast in warm water. I add half of the vegetable oil, flour and salt. I begin to knead the dough. In the process add remaining butter. Knead the dough until homogeneous. It should be elastic and fairly stiff. I roll the dough into a ball, put it in a bowl, cover it with clingfilm and leave it to rest for 30 minutes.

Making stuffing. Melt 30g of butter in a pan and fry chopped peppers and leeks in it one by one.

Slice boiled pork into small pieces. Grate cheese on large grater.

I make sauce. I cut leeks in half rings and fry them in butter (20g) until golden brown.

Put them in a bowl and purify with a blender.

I make classical béchamel sauce. I put butter (30g) in a bucket. Melt it (do not let it boil). I add flour and stir vigorously with a wooden spoon until it turns yellow (about 1 minute). Then I start pouring in milk in portions. In doing so, I actively stir the sauce with a whisk to prevent lumps from forming. When all the milk has been infused, I keep it on the heat for 1-2 minutes. The longer the heat, the thicker the sauce will be. We don't want it thick.

I take the sauce off the heat.

I add onion puree, chopped dill, salt and ground black pepper to taste. Stir. The sauce is ready. I put it in a bowl and leave it in the fridge until serving.

I take out the dough. Roll it out into a circle. I line a baking tray with parchment. I place the pastry circle on top of the parchment. In the middle of the circle, I make small cuts with a knife (3 strips, about 10 cm in length overall).

I spread cottage cheese on the dough.

Lay fried leeks on top of the cottage cheese. Place sliced pork on top. Salt to taste.

Arrange roasted bell peppers on top of the meat.

Then I put grated hard cheese. Season with salt again to taste.

Then I make a pie. I take the edge of the pastry on the outside, which is opposite the corner of the slice. Pull it slightly over the filling. With my other hand, take the corner from the middle and pull it over the dough on the outside. And then tie it underneath. I pull all the corners this way. On the outside I make small pinches, so that the dough was more densely laid in the open areas of the pie.

You can probably tell more from the photo. I grease the pie with whipped egg yolk. I place it in a preheated 200 degrees oven for 20 minutes. Bake until golden brown.

I take the finished pie out of the oven and let it cool for 15 minutes. Then carefully remove it from the parchment and transfer it. Pie "Saturday" ready. I put it on a plate. Put a bowl of onion sauce in the middle. Enjoy!
