Dough

  • Whey (kefir or natural yogurt is okay) - 250 ml
  • Sour cream - 100 g
  • Water - 400 ml
  • Sugar - 2 tablespoon
  • Salt - 2 teaspoon
  • Vegetable oil - 2 tablespoon
  • Yeast (7g, I have TM "Dr. Oetker") - 1 sachet.
  • Wheat flour / Flour (approx.) - 1 kg

Stuffing

  • Ground meat (I have beef+pork+onion+salt+pepper) - 400 g
  • White cabbage / Cabbage - 400 g
  • Onions (large) - 1 pc
  • Vegetable oil (for frying) - 2...3 tablespoon
  • Salt (to taste)
  • Black pepper (to taste)

Optional

  • Vegetable oil (to grease layers) - 2 tablespoon
  • Chicken egg (for greasing the pie) - 1 pc

How to cook cabbage pot pie and meatballs step by step with photos


First make sourdough. Take 100 ml of total water, heat until hot, pour into a 0.I add 1 teaspoon of sugar (from the total) and yeast. I have a very high quality yeast TM "Dr.Oetker.

Add sifted flour to the dough consistency of pancakes, stir it and leave it in a warm place, do not cover it.

In 15 minutes the batter should rise to the neck of the jar.

While the batter is rising, mix together in a large bowl the sour cream, whey, butter, salt, the remaining water and sugar. Heat on low heat until warm, stirring all the time, so that the sour cream does not curdle. The salt and sugar should dissolve.

We add here the raised stew, stir it, then gradually pour in the sifted flour and knead the dough for 10-15 minutes. The ready-made dough should be soft, but not sticky to your hands. Cover the container with clingfilm and put it in a warm place for 1-1.5 hours. The dough should rise 2 or 3 times.

While our dough is "gaining strength", we prepare the stuffing. Chop onion and cabbage.

Saute the onion for a few minutes in heated oil, add the cabbage and stew over a low heat under a lid until soft, salt, pepper. The cabbage can be made more browned by increasing the heat, but make sure it does not burn.

Make meatballs out of minced meat. I made them the size of a walnut.

Knead the dough when it has risen and divide it into five parts. One of them will be the base of the pie, three - the top part, and the last one I had extra (the dough is quite a lot), I used it to bake buns)

Roll out one of the parts into a 2-3 mm thick round layer, put it on a parchment-lined or buttered baking sheet. Then put the cabbage and onion a couple of centimeters away from the edge and loaf dumplings on top.

Roll out the other layers in the same way. Butter two sheets and stack them on top of each other, leaving the unlubricated one on top. Cut into 8 slices, cutting through all the layers.

Take one sector, pull the right corner from a wide edge to the middle of the sector.

Pull up the corners of the middle and bottom layers in the same way. Do the same thing on the left side.

Press down on the left and right side with a stick, as shown in the picture.

The "tail" of the sector layer by layer shift half of the blanks to the left, the other half to the right.

Shape the pie crust by lifting the edges and pinching them well.
