Sausage in dough is a popular and easy dish. There are many ways to cook them. Sausages in dough can be made in the oven or in a pan, with yeast dough, puff pastry, etc. I suggest a variant of nourishing and fragrant sausages in dough. The stuffing includes fried onions and the topping of the patties is sprinkled with grated cheese and provan herbs. The patties are big enough to eat once and you're full. Using small sausages, you can make smaller patties. This pastry is perfect for a picnic, or as a snack for work, a walk, or a trip.

Ingredients for sausage picnic patties:


Dough:

  • Milk - 100 ml
  • Water - 200 ml
  • Butter - 50 g
  • Wheat flour / Flour - 500 g
  • Sugar - 2 teaspoon
  • Salt - 2 teaspoon
  • Yeast (dry quick) - 2 teaspoon

Stuffing:

  • Sausage (9-10)
  • Onions (large) - 2 pcs
  • vegetable oil - 2 tablespoon
  • Salt - to taste
  • Tomato paste (no topping) - 1 tablespoon

Optional:

  • Parmesan (grated) - 4 tablespoon
  • Spices (Provencal herbs) - 1 teaspoon
  • Egg yolk - 1 pc
  • Milk - 1 tablepoon
  • Vegetable oil - 1 teaspoon

How to cook sausage patties step by step with photos


In a bowl I mix warm milk and water, salt and sugar.

I add sifted flour mixed with yeast and room temperature butter or melted butter.

Thoroughly knead the dough, which should be soft and not sticky to your hands. I cover the dough with cling film and let it increase in size.

While the dough is cooking, I prepare the stuffing. I peel and wash onions and dice them.

I pour vegetable oil into a frying pan, add chopped onions. Cook onion over low heat until soft.

Salt onions to taste, add tomato paste.

Mix the ingredients, fry a few more minutes, remove from stove.

Knead the dough when it has risen.

To make the patties I use a package of sausages, which has 9 of them. Since, again, the patties are large, you can use a larger quantity of sausages. Then the dough must be divided by the number of sausages. I divide the dough into 9 equal pieces.

I form balls of dough, cover them with clingfilm and leave them in rest for 10-15 minutes.

Using a rolling pin, roll out a piece of dough into a rectangle.

In the middle I put part of the onion frying, distribute it along the length of the sausage.

I put a sausage on top of the frying.

I join and seal the edges of the dough.

I grease a baking tray with oil, lay patties on it with a seam downwards. Cover the patties with cling film, give them to swell a little.

I mix egg yolk with milk, beat with a fork. I smear the mixture on top of the patties.

Sprinkle patties with grated parmesan (you can use any hard cheese), provan herbs.

I bake patties in heated up to 180-190 degrees oven for about 20-22 minutes. During this time the patties should be baked and get a crust. Enjoy your cake!
