Sausage is rarely used in homemade baked goods. We mostly bake them in dough or add them to pizza toppings. However, they can easily replace minced meat, especially if there is no time to prepare something more complicated. I would like to suggest making a very tasty tear-off yeast pie with sausage and cheese. It's essentially a layered pizza, the pie pieces are easy to tear off, dip in tomato sauce, and convenient to eat. There's nothing complicated about making a pie. The only thing is to knead the yeast dough properly so that it is soft, tender, elastic and obedient. You will also need a little extra time to rise the dough. This pie will give you a quick and filling snack without taking a lot of time to prepare dinner. If desired, sausages or wieners can be used instead of sausages.

Ingredients for yeast pie with sausage stuffing:


  • Yogurt (natural, room temperature) - 150 g
  • yeast (fresh) - 8 g
  • Wheat flour / Flour (a little more for dusting) - 230 g
  • Chicken egg - 1 pc
  • Sugar - 1 teaspoon
  • Salt - 1 teaspoon
  • Vegetable oil - 2 tablespoon


  • Ketchup (or tomato sauce with spices) - 5 teaspoon
  • Sausage - 100 g
  • Mozzarella (grated) - 150 g

Tomato sauce

  • Passed tomatoes - 100 g
  • Salt - to taste
  • Sugar - to taste
  • Spices - to taste


  • Egg yolk - 1 pc

How to cook yeast pie with sausage filling step by step with photos

Crumble yeast pour yogurt and add sugar. Let it sit for 2 to 3 minutes., let the yeast dissolve, stir in. Beat beaten egg.

Pour in vegetable oil, mix thoroughly. Add flour in batches, the dough begins to clump.

Grease your hands with oil and knead the dough. Grease a bowl and dough with vegetable oil, cover with a towel, Place in a warm place for 1 hour. After an hour, knead the dough, cover with a towel and leave alone for another 30 minutes. Dust a work surface with flour, spread out the dough.

Divide dough into 3 portions (I had 150g each). Roll out each piece to a sheet, Cut out a circle, I have a plate dia. 18cm.

To prepare tomato sauce, mix tomatoes, salt, sugar, spices. Bring to boil, remove from heat, cool. Grate sausages on large grater. I have already cooked cheese.

Spread the pastry circle on a baking tray lined with baking paper. Brush the surface with ketchup (tomato sauce). Spread half of the sausage stuffing on the pastry, and top with cheese. Spread amount of cheese three times. Cover with second pastry circle.

Spread ketchup (tomato sauce), sausage, cheese. Cover with third dough circle, press lightly.

Place a small bowl in the center of the dough and with a sharp knife make cuts all the way down into 8 pieces, like a cake. Pull each piece lightly and twist it twice.

Turn on the oven to preheat. This is long enough for the dough to rise. Remove the bowl from the pastry. Whisk egg yolk, 5-7 minutes. Before baking, brush the pastry with the egg yolk. Sprinkle with cheese.

Bake in preheated oven at 200° C for 25-30min. (watch your oven). Serve with ketchup or tomato sauce if desired.
