Ingredients for soft cakes:

  • Wheat Flour / Flour (+ a little for dusting the table) - 600 g
  • Yeast (dry quick) - 7 g
  • Water (warm boiled) - 300 ml
  • Vegetable oil (you can adjust the oil amount to your taste) - 70 ml
  • Sugar (the amount of sugar can be reduced, both in the dough and in the filling) - 4,5 tablespoon
  • Apple (I took sweet, Golden variety) - 5 pcs
  • Vanilla sugar - to taste
  • Cinnamon - to taste
  • Salt (no slide) - 1 teaspoon
  • Tea in tea bags (black) - 1 pc

Make a sourdough starter. Stir 2 tablespoon sugar, 4 tablespoon plain flour and add the yeast in warm water. Whisk with a whisk until smooth.

And cover the stew with a towel and leave it in a warm place for 20 minutes. I put it in a warm oven, which has been preheated to 100 degrees.

In the meantime let's sift out the rest of the flour. We add it in portions to the sourdough. Pour in a little vegetable oil and salt. Knead the dough for about 10 minutes to make it elastic and not sticky to your hands. Cover it and put it back in a warm place for 1 hour. My soup was boiling on the stove, so I put a bowl next to it, to let the dough get warm. You can also put the bowl in warm water.

When the dough is almost ready, you can do the filling. Wash and peel the apples, then cut them into chunks. Add 2 tablespoon sugar (more if you use sour apples), cinnamon and vanilla sugar to taste. Stir.

The dough is ready. Divide the dough into three portions and roll out each portion to form a sausage like this.

Divide sausage into equal slices, knead and roll into circles.

Spread stuffing on rings, pinch edges, slightly flatten on top. Such patties will come out.

Put them with the seam side down on a baking tray lined with baking paper. I have 35 patties with the specified number of ingredients.

Cover the patties with a towel and let them rise for about 5 minutes. Meanwhile, brew some strong black tea, add 0.5 grams of sugar, and let cool. Glaze the brownies with the tea brew and bake them in a preheated 180 degrees oven for 15-20 minutes until they brown.

Now a little secret. Many housewives probably know it and have been using it for a long time, but I'll tell you about it anyway. To make sure your patties are airy and soft, soak a clean kitchen towel in cold water and wring it out. When you take the tray out of the oven, immediately put "compress" on the patties and wait half a minute. This technique will also save overdried pastries if "the compress" applied at once while the patties are still very hot. In this case the towel should be kept on the patties a little longer, about a minute.
