Siberian Fish Pie

Ingredients for fish cake "siberian":


Dough

  • Milk - 200 ml
  • Yeast (Dry granulated yeast) - 7 g
  • Sour cream (1 tbsp. tablespoon with spoonful) - 1 tablespoon
  • Chicken egg - 1 pc
  • Sugar - 1 tablepoon
  • Salt - 1/2 teaspoon
  • Butter - 30 g
  • Vegetable oil - 2 tablespoon
  • Wheat flour / Flour (200 ml glass.) - 3 glass

Stuffing

  • Fish (fish ragamuffin, body length 20 cm.) - 5 pcs
  • Salt - to taste
  • Black pepper - to taste
  • Onions (Large onion) - 1 pc
  • Bay leaf - 1 pc
  • Butter (for the filling and to grease the pie after baking) - 100 g
  • Chicken egg (To grease the cake before baking) - 1 pc

Sprinkles

  • Sesame - 1 teaspoon

How to cook fish cake "siberian" step by step with photos


Ingredients for making fish (vendace) pie.

Heat milk, add to warm milk (200 ml.) melted butter (30g.).

Add granulated yeast (7g.).

From the total amount of flour take 1 tbsp. spoon and add to the mixture of milk, butter and yeast, add 1 tbsp. tablespoon of sugar. Stir the mixture, cover with a piece of cloth or cling film and leave it to swell the yeast.

After a while a cap of small bubbles will form on the surface. The stew is ready.

Add 1 tbsp of sour cream and a heaping tablespoon of sour cream to the stew. Spoonful of sour cream.

Add 1 egg. Stir the mixture.

Add rest of flour in portions.

Knead the dough. Cover the container with cling film or a towel and put in a warm place to rise. After the first rise, knead the dough and put it aside for a second rise. Afterwards you can cut the cake.

For the filling: Peel the vendace, remove its fins, tail and head.

Cut the fish into pieces. Remove the backbone and bones.

Cut the onion into thin rings (half rings).

The dough has risen well enough, you can proceed to cut the pie. I would like to point out that from the total amount of dough you will have 2 pies D 22 cm.

Roll out the dough as a sheet. Cut it into a circle.

Grease a baking dish with a thin layer of cooking oil. Turn the pastry circle into the tray and smooth it out. Arrange the onion rings.

Put fish slices on onion rings. Salt and pepper the fish to taste.

For the filling we need 100g. butter. 70g. cut into pieces and put it on the fish, 30g. We'll leave it to butter the fish after baking.

Then put the rest of the onion rings, add the bay leaf.

Roll out the pastry as a sheet and cut out a second circle in the same way as the first. Place the circle on top of the filling. Fold the edges of the circle toward the middle. Gently smooth out the pie, pressing lightly around the edge. Make an opening in the center with a wooden splinter to let the excess air out and steam while baking.

Roll out the pieces of dough into sheets, cut out strips, roll up the strips in the shape of flagellum.

Grease the edge of the pie with water, put the dough rolls along the edge of the pie. Decorate the pie to taste.

Brush the pie with beaten egg, sprinkle with sesame seeds. Send cake to preheated oven up to 180C. Bake until ready. I want to draw your attention to the fact that everyone has different ovens, each must use his or her own. Perhaps in some ovens the temperature setting should be reduced or increased.

The second variant is possible, with other stuffing. The second cake was baked with potatoes.
