A rich, honey-like flavor and bright color gives the pastry its saffron flavor. Sour cream makes the pie dough more tender and flavorful. These wonderful holiday cakes are easy to make for your table, you just need to give the dough a chance to rise, and the rest is easy to do, even for beginners.

How to cook sour cream patties step by step with photos

I propose to make a wonderful muffin. I would even call them muffins, but since. к. filling - we'll call them muffins. So... Make a starter out of yeast, whey/milk/water, sugar and two tablespoons of flour. Mix all the ingredients until homogeneous, to the consistency of thick sour cream, cover and leave in a warm place to mature for 1.5 to 2 hours. If the yeast is fresh and strong, the leavening mixture will double or triple in size. A good leavened stew will get rid of the yeast aftertaste.

Meanwhile, prepare the necessary ingredients. Pour the saffron in boiling water, infuse for at least 30 minutes. Separate the egg yolks from the whites and mix together. Put the sour cream and butter in a warm place. Sift the flour.

When the pastry rises in a thick bubbly cap and begins to settle, add sugar, warm sour cream, saffron infusion, mix well.

Add salt, egg yolks and flour. Knead with a spoon or a mixer with "with a mixer or spoon". Then knead well on a oiled workbench until elastic. The dough should be of medium consistency, not spreading on the table, as. к. The dough should be of medium consistency, it should not spill out on the table as the patties will not hold their shape; if the dough is very soft, knead in some flour. The picture shows a cross section of the dough after 15 minutes of kneading "puffing". Grease a bowl or saucepan with oil. Oil in a bowl or a saucepan, put the dough in it, cover with a towel and leave in a warm place to rise.

Raisins should be sorted out, washed and covered with hot water for 10 minutes. Drain in a colander. Peel and finely dice the apples, dice the orange with a medium dice (I took "honey orange in powdered sugar", It is also called Fortunella or kumquat, incidentally, it strengthens the immune system). Combine everything in a pot or saucepan, add oil, stew over low heat until the apples soften (if the apples are soft enough 7 minutes, stiff a little more), add the starch, warm with stirring. Remove from heat, cool.

The dough rose well and doubled in volume. On a work surface, divide the dough into pieces. I had 20 pieces, weighing 50-55gr.

Roll up each piece into a ball, place it on a table or a tray, put a film over it and let it stand for 30 minutes.

Then flatten out each piece with your palm or roll out with a rolling pin into a small cake. Cut out the middle with a notch or glass. Place a portion of the stuffing in the center, make two or three loops out of the cut ring on your fingers and put it on the stuffing,

Press gently with palm of your hand. Preheat oven to 170°C, turn counter "turn it up and down". Shaped in this way put the cakes on a tray, I covered it with a non-stick mat, you can oiled parchment, again cover with clingfilm, that the muffins would not get too stale,

After a 20-minute proving period, grease the cake with a mixture that I had prepared in advance, mixing one egg yolk, 0.5 tsp. spoonful of sugar and 2 tablespoons of milk, it will give a bright color to the pastry.

Put the tray with the patties in the oven, leaving the door slightly ajar, after 7-10 minutes, the patties have visibly enlarged and the surface has become more glossy, close the door, t increase to 180°C.

Bake for 20-25 minutes, adjust to your technique. Surface of patties should brown well.

Remove the tray from the oven and cool the patties on a rack or towel. The finished patties can be left with a glossy surface or sprinkled with powdered sugar. Muffinous and flavorful, moderately sweet, puffy pies can be served. Equally delicious with milk, tea or coffee.
