This cheerful and colorful springtime spinach dough pie is light and delicious filled with cottage cheese, pumpkin and hard-boiled eggs. Even a nutritionist would approve of this combination of products! You can make spinach pie for lunch or dinner and offer it with a salad of fresh vegetables.

Ingredients for the spinach pie with cottage cheese and pumpkin:

Dough :

  • Wheat Flour / Flour - 350 g
  • Yeast (dry Dr. Oetker) - 1 teaspoon
  • Milk - 120 ml
  • Butter - 50 g
  • Spinach (mashed spinach (frozen)) - 30 g
  • Salt - 1/3 teaspoon
  • Sugar - 1 teaspoon
  • Eggs - 1 pc


  • Cottage cheese (220-250) - 220 g
  • Pumpkin (chopped) - 200 g
  • Hard cheese (100-130(измеlьtspенный)) - 100 g
  • Chicken egg (2-boiled, 7-cooked) - 9 pcs
  • Salt - 1/3 teaspoon
  • Pepper mixture - to taste
  • Sesame - 1 teaspoon

How to cook spinach pie with cottage cheese and pumpkin step by step with photos

For a nice green pastry, you'll need spinach puree (30g total.) It's not really convenient to make such a small amount of puree (just dirty the dishes). It is more convenient (and rational) to have mashed spinach in the freezer. After thawing, the puree retains its smooth and homogeneous consistency, as well as its bright color. Spinach puree: Spinach leaves -500 g. Vegetable oil 100 g. Rinse fresh spinach leaves (preferably fresh, and only the leaves). Put washed spinach into a saucepan of suitable size, pour boiling water over the spinach, cover with a lid for 3-5 minutes. In a tall (narrow) bowl (e.g. a plastic cup=1 liter), transfer leaves without water (if possible, press the hot leaves with a spoon, getting rid of excess water). Pour in vegetable (refined olive oil, or grapeseed oil) to the hot leaves, chop the spinach with an immersion blender into a smooth, uniform mass. Spread the puree into silicone molds, not large in size, and freeze. Put frozen spinach briquettes in a container and keep in the freezer. Use per 300-400g. flour=30g. spinach puree.

Ingredients for making spinach dough :

Mix butter+sugar+salt+spinach puree in warm milk. Stir in the flour mixed with the dry yeast. Knead the dough either by hand or in a bread maker (I'm happy with the second option, it's quick-quality and good).

Ready dough transfer to a bowl (~3 liters), greased with oil, cover with clingfilm, put in a warm place for 1 hour.

Products for the filling:

Crumble dense (grits) cottage cheese into a bowl, add shredded pumpkin, shredded cheese, salt and pepper. Mix the raw eggs in a bowl, pour into the cottage cheese mixture (leave a little egg melange to coat the top of the pie). The pie filling uses hard-boiled eggs (in my recipe, I have Easter stained eggs), which must be peeled from the shell.

As time passes, the dough is well "grew". In a baking dish (d=24cm, h=5cm).)Grease it with butter.

Spread part of the dough (2/3) on the bottom and sides of the mold (the dough is very soft and \"docile\")It spreads easily without unrolling. Spread half of the filling on the dough, make little hollows in the filling and place in the "pits"place boiled eggs and spread the rest of the filling on top.

Roll out the rest of the pastry into a thin layer (on a lightly floured surface), spread it over the filling, join the pastry tightly around the edge, make a circle. Brush the top of the pie with the egg, make a few notches with scissors, sprinkle generously with sesame seeds.

Bake the cake at 190-200 degrees = 45-50 minutes.

Finished pie let cool a little, cut the pie into portions, serve with fresh vegetables. Enjoy Enjoy!!
