For the pastry

  • Wheat flour / Flour - 310 g
  • Milk (warm) - 100 ml
  • Yeast (dried or 15g fresh) - 5 g
  • Sugar - 2 teaspoon
  • Salt (without sprinkles) - 1 teaspoon
  • Mineral water - 50 ml
  • Butter (TM "Milier", room temperature) - 50 g
  • Chicken egg (medium) - 1 pc
  • vegetable oil (to grease a bowl for dough) - 1 teaspoon


  • Hard cheese (grated or soft) - 4 tablespoon
  • Butter (melted, TM "Milier") - 25 g
  • Sour cream - 1 tablespoon
  • Seasoning - 1 teaspoon

To grease the cake

  • Egg yolk - 1 pc
  • Sour cream - 1 tablepoon
  • Sesame (for the middle of the pie) - 2 pinch.

How to cook cake "spring" with mineral water step by step with photos

1. Ingredients for making Spring Cake.

2. Prepare the sourdough. Dissolve yeast and sugar in warm milk and add 2 tablespoonfuls of flour. Place a bowl of sourdough in a warm place until it forms a foamy cap.

3. In a large bowl, add butter, egg, salt, water and leaven.

4. Add sifted flour and knead into a smooth dough, which is not sticky. It took me exactly 310 grams of flour.

5. Form the dough into a ball. Grease a bowl with oil and knead the dough so that the lump is covered with oil. Cover the bowl with oiled clingfilm and set in a warm place...

6... Let it rise to 2.5 times its original size.

7. For the pie filling: mix melted butter with your favorite spice and sour cream. Grate cheese on a fine grater.

8. Pull out the dough and knead. Separate 25g of the dough from the mixture. This will be the middle.

9. Roll out each piece of dough into a 22 x 30 rectangle.

10 Grease the pasta sheets with melted butter and sprinkle with cheese.

11. Fold each rectangle in half.

12. Cut into strips 1.5 cm wide.

13. Carefully twist the strips so as not to stretch them, connect the two ends.

14. Take a baking tin (F 22-23 cm). Lay a silicone pastry mat (do not grease it) or baking paper (grease it) on the bottom. Lay the pastry sheets along the rim of the tin.

17. Cover the cake with a light cloth and put it in the oven. Turn the temperature to 40 C and let the pie stand. In 15 minutes the pie has doubled in size.

18. Turn the temperature of the oven to 190 C. Take out the cake and brush it with whipped egg yolk and sour cream. The middle may be sprinkled with sesame seeds or cumin. Put the baking tray into the oven and bake the pie until golden brown, ~30 minutes.
