Sea buckthorn is a treasure trove of vitamins that can substitute all your medicine cabinet. It does not lose its nutritional value during both freezing and heating. The berry ripens in the fall, for some reason it has been undeservedly forgotten in recent times. I offer you a pie with sea-buckthorn mousse and diet cake on the basis of oatmeal flakes. This is a pie for those who watch out for their figure and don't mind enriching their diet with vitamins.

  • Oat Flakes - 200 g
  • Raisins - 50 g
  • Cognac - 2 tablespoon
  • Butter - 50 g
  • Milk - 125 ml
  • Chicken egg - 1 pc
  • Honey - 75 g
  • Dough leavening agent - 1 sachet.
  • breadcrumbs / Breadcrumbs - 2 tablespoon


  • Buckthorn - 500 g
  • Sugar - 0.5 glass
  • Water - 0,5 l
  • Gelatin - 30 g


  • Sour cream - 300 g
  • Sugar - 50 g
  • Gelatin - 15 g

How to cook cake "sunny delight" step by step with photos

Let's make the necessary products.

Fill raisins with brandy for about 15 minutes.

Add egg yolk, melted butter and honey to the flakes.

Stir .

Add milk.

Whip egg white into a stiff foam, add it to the oat mixture together with the raisins.

Knead the dough thoroughly with your hand, as it is not quite convenient with a spoon. Spread the dough into a small bowl, sprinkled with breadcrumbs. I used a glass dish 20-21 cm in diameter, lined with baking parchment. Bake in the oven at 180 degrees for 30-45 minutes.

I used sea buckthorn for decoration.

Pour the gelatin with water in different containers 30g for the sea buckthorn and 15g for the sour cream.

Crush the sea buckthorn with a blender.

Then rub the crushed berries through a sieve.

Pour water over the oil cake, add sugar, stir and strain the drink.

Mix the hot drink with gelatin, let it cool, then mix it with sea buckthorn juice.

Heat another portion of gelatin without bringing it to a boil and mix with sour cream.

Spread the sour cream layer on the cake and put it in the fridge.

Whisk the sea buckthorn mixture with a blender on medium speed for 5 minutes, then make a break and repeat the process three times. The mixture will be more delicate, somewhere between sea buckthorn jelly and mousse. Pour part of the sea buckthorn and gelatin on the frozen sour cream layer. Place in refrigerator.

Pour the second part of the sea buckthorn mixture into the moulds and set aside in the fridge.

Pour the frozen sea buckthorn decoration on the cake. Decorate the top of the pie with sea buckthorn berries, if desired.

Moderately sweet and moderately sour the top of the pie. My experiment was a success, the pie was delicious, healthy and beautiful!
