Ingredients for sweet cherry curd lasagna:


  • Butter (75g - pour; 125g - dough) - 200 g
  • Sugar (75g - filling; 150g - dough; 1 tsp.l. - in water for boiling lasagna sheets) - 225 g
  • Honey (any, pouring) - 1 teaspoon
  • Almonds (petals, pouring) - 30 g
  • Cherries (fresh or from compote, net weight - 390 gr) - 500 g
  • chicken egg (dough) - 4 pcs
  • Cheese mass (or fat-free cottage cheese - dough) - 1 kg
  • lemon juice (dough) - 6 tablespoon
  • semolina (dough) - 4 tablespoon
  • Vanilla pudding (Dough, can be replaced with starch - 37g.) - 1 bundle.
  • Lasagna (sheet) - 8 pcs
  • Salt (to taste)

How to cook sweet cherry curd lasagna step by step with photos


As always, let's start with the ingredients you have on hand. I want to note right away - do not let the dry pudding scare you (not everyone, I understand, can find it - replace it with starch, preferably corn starch - the composition is almost the same). Before you start cooking, prepare the cherries. The recipe provides both fresh and from the compote, of course, without pips. Pips, if you have any, remove them. I made them from the compote. Toss the cherries on a sieve to remove moisture, let them dry out.

Bring 75g butter, 75g sugar and 1 teaspoon honey to the boil, add 30g almond pips - mix and remove from heat.

Mince 125g of butter and 150g of sugar into a creamy consistency - I used a little mixer.

Separate the eggs into egg yolks and whites - one at a time is best, so as not to damage the yolk.

Whisk the yolks (without fanaticism) into the sugar and butter mixture. Here we add the curd mass (if you have cottage cheese, be sure to grind it a couple of times through a sieve), 6 tablespoon of lemon juice (I had just enough of one lemon), semolina and dry pudding. Mix everything thoroughly - I used the mixer again.

Boil the lasagna sheets for 5 minutes, in lightly salted water, with 1 teaspoon of sugar. Cook the sheets no matter what it says on the package - "You do not need to boil them first".

Once the sheets are cooked, discard them in a sieve and cool them down with cold water.

Meanwhile, beat egg whites to a stiff peak with a mixer and gently fold them into the curd batter. Gently and thoroughly mix with a spatula until smooth.

Grease a 35*23 dish (I have one) with butter and spread 3 tablespoons of curd mixture on the bottom of the dish. 4 sheets of lasagna on top - in my form it was slightly overlapping.

Spread half of the normal amount of curd mass on top, on it half of the cherries in random order, without pressing. Repeat the process - sheets, dough, cherries.

On top of all this beauty we evenly spread our honey-sugar-almond sauce - it turns out thick, I applied it with a fork.

The oven, as always, is preheated to 200 degrees Celsius. We put the tray with lasagna on the medium level and bake for 40-45 minutes.
