Ingredients for pies and marmalade soft rolls:


  • Milk - 250 ml
  • Yeast (dry) - 5 g
  • Sugar - 1 tablespoon
  • Sunflower oil (+ 0.5 tbsp.l. - to grease the bowl) - 2 tablespoon
  • Vinegar (I have apple 6%) - 1 tablespoon
  • Chicken egg (116 grams) - 2 pcs
  • Wheat flour / Flour (+ 1 tbsp.l. for dusting) - 540 g
  • Salt (without/highland.) - 1 teaspoon
  • Vanilla sugar (optional) - 1 sachet.


  • Sausage (dairy) - 8 pcs
  • Marmalade (raspberry flavor) - 100 g
  • Sugar (for sweet rolls) - 1 tablespoon
  • Butter - 50 g
  • Peanuts (other peeled ones are also possible) - 2 tablespoon


  • Egg yolk (+ 1 tbsp.l. milk - to grease the pastry) - 1 pc

How to cook cakes and marmalade buns step by step with photos

1. Prepare the baking dish. Add sugar (1 tablespoon) to lukewarm milk (60 ml), stir until sugar dissolves. Mix 1 tablespoon of sifted flour with dry yeast. Stir in sweetened milk and place in a bowl with the sourdough starter until a foamy cap appears.

2. Prepare the batter. Stir in remaining sifted flour and pinch of salt.

3. Whisk the eggs and add the milk and apple cider vinegar. Then add the frothed starter, cooking oil and vanilla sugar.

4. Add the flour mixture in small portions to the obtained liquid mixture. Knead a soft dough that is not sticky to the hands.

5. Grease a clean bowl with vegetable oil (0.5 tablespoon) and place the dough, rolling in the oil. Cover the bowl with cling film or a tightly closed lid and leave to rise 2 ½ times in a warm place.

6. Prepare the filling. Melt the butter (50g) in the microwave. Cut slices of marmalade into slices. Roast the nuts in a dry pan and chop them. Slice each sausage into 2 pieces.

7. Knead the dough when it has risen...

8... and divide into 12 portions.

9. Form the rolls into 6 pieces of dough. Roll out each piece of dough one after the other into a long cake (~30*7cm), brush with melted butter. If you are a sweet tooth, sprinkle with sugar.

10. Lay out the marmalade sheets.

11. Then cover the filling and form a roll.

12. Roll up the roll into a snail shape.

13. Cover the baking tray with baking paper and grease with vegetable oil. Place the buns on a baking tray, brush with melted butter, and let them proof until they double in size. I usually send it for 20 minutes in an oven heated to 40 C.

14. After the proofing, brush the baked items with whipped egg yolk (only the top) and sprinkle with chopped nuts. Turn the oven temperature to 190° C and bake the buns until golden brown, about 30 minutes.

15. Form patties - hearts. Roll out each piece of dough (6 pieces) into a long cake, cut into 3 pieces, brush with melted butter.

16. Take a cut sausage and wrap each half in a strip of dough.

17. Then use a wooden toothpick to join the 2 halves together.

18. Shape a heart from the halves and secure with a toothpick.

19. Do not forget to remove the toothpicks after baking! I have 6 pieces of dough and 8 hearts.

20. Turn the patties out onto greased paper. Butter the hearts and let them proof. After proofing, bake in a preheated oven until golden brown.

21. Then brush the hearts with whipped egg yolk, sprinkle with toasted sesame seeds, even more delicious with cumin and send in the oven for 5 minutes until the crust browns. Bon appetit!
