Thanks to my grandmother, I grew up and got back on my feet. May you rest in peace and eternal memory, my darling! My grandmother's name was Tatiana, and I don't remember how she baked pies, but I'll never bake them this way, they were not just the taste of my childhood, they had a piece of her soul in them! And even though Tatiana's day has already passed. Today I baked a pie as a token of my eternal and endless love for her! And today will be Tatiana's day for me and for her... A day of remembrance, love, gratitude and memories.

Ingredients for the cake "tatiana's day":


Sweet pastry

  • Chicken egg - 2 pcs
  • Margarine - 150 g
  • Sour cream - 200 g
  • Sugar - 1 glass
  • Yeast (Dry quick-acting yeast "Saf-Moment") - 1 package.
  • Soda - 0,5 teaspoon
  • Wheat flour / Flour (approx.) - 4 glass
  • Water (warm) - 50 ml
  • Salt - 0.5 teaspoon

Dough is not sweet

  • Wheat flour / Flour - 300 g
  • Water - 130 ml
  • Yeast (Dry quick-acting yeast "Saf-Moment" with a slide) - 1 teaspoon
  • Soda - 1 g

Stuffing

  • Jam (from caramelized apples) - 300 g

Dissolving yeast TM "Saf-Moment" in 50 g of warm water

Add melted margarine, beaten eggs with sugar, sour cream and soda and salt.

Knead thoroughly and add flour. The dough must not be stiff. Leave to rest for about 10 minutes. (after 10 minutes you can make cakes or pies, cover with a towel for about 40 minutes). After 40 minutes you are ready to bake.) If you don't want a sweet dough, just leave out the sugar, for meat pie for example.

Make unsweetened dough (for decorations) To keep the toppings from getting ruddy when baked, do not add sugar or eggs to this dough. Combine flour and TM yeast "Saf-moment"and baking soda (I do not know what the baking soda is for, I do as taught)

Pour in warm water

Knead the dough until it is very dense. It may take more water or flour - use your own judgement

Roll out the dough into a cube and set aside. I forgot to cover with cling film, as recommended, but nothing happened

Roll out the sweet dough, put it on a baking tray lined with siliconized baking paper. I made a heart shape by squeezing it out with a baking mold

This is the filling-grandma loved apples and grapes... I have caramelized apple slices in grape jelly

Use a pastry cutter to cut a grid of leftover pastry

Lay it on top of the apple slices

Cut off excessive pieces of netting in the shape of a heart

Make a long roll of dough

Place it around the heart

Use scissors to make random notches on it

Brush with egg and bake for 15 minutes at 180 degrees

During this time, we roll out the unsweetened dough, cut out circles for the roses and randomly with a knife leaves

Shape the flowers and make streaks on the leaves

Take out the cake, decorate it

Decorate as you like. I liked it this way. I baked it for another 15 minutes at 180. By the way, I didn't really like the white pastry and I dampened the flowers with water 5 minutes before baking time - they became a little creamy (but that's my whim)
