How to cook Turkish samsa "birds of happiness" step by step with photos

Prepare all the ingredients for the dough: flour, eggs, plain natural yogurt, olive oil, baking powder, water and dissolved salt.

Everyone has different flour, so sift 400 grams of flour into the bowl, add the rest of the ingredients and begin kneading the dough. Add the rest of the flour as you knead the dough. You may need a little more or a little less flour.

Knead the dough until it is soft and does not stick to your hands. The dough should have the consistency of an earlobe, but it should be fairly soft. Cover the dough and let it rest for about 30 minutes.

For the stuffing I took ground beef with the addition of turkey fat. You can take any minced meat to your liking. Let's add chopped onions and spices to the stuffing and mix it well. There are a lot of onions, but they will make the stuffing juicy.

Divide the rested dough into 6 equal parts. Be sure to cover the dough while working with it so it doesn't dry out.

While working with the dough, dust the work surface with flour. Take 1 piece, roll it out, then just gently stretch it with your hands. The dough is very pliable and stretches out well. It's about as thick as a sheet of paper.

dust the dough a little with flour. Roll out the dough on a rolling pin, leaving 2 cm of the edge free and a little compression from the edges to make an accordion.

Unwind the dough from the rolling pin. We've got this.. "pleated" .

Place 4 spoonfuls of filling on the dough, spacing them apart. One piece will make 4 samosas. Т. е. I have a total of 24 "Birds of happiness". You can make 4-6 samosas from 1 billet, it's up to you. Т. е. you get 24-36 pieces

Place stuffing on top of dough.

Put dough between minced meat and tear off pieces accurately.

Here are the birds with noses and tails. Place the samsa on a baking tray, brush with an egg mixed with milk and sprinkle with sesame seeds. Bake the samsa in a preheated oven at 190 °C for 25-30 minutes. Depending on the color of the samosas and the personality of your oven.
