Dough

  • Wheat flour / Flour - 480 g
  • Chicken egg - 1 pc
  • Yogurt (natural) - 100 ml
  • Olive oil - 50 ml
  • Water - 100 ml
  • Salt - 1 teaspoon
  • Dough leavening agent - 1 teaspoon

Stuffing

  • Ground beef (beef / turkey fat) - 1 kg
  • Onions - 5 units
  • Cumin - to taste
  • Nutmeg - to taste
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro (dried) - to taste

For greasing and sprinkles

  • Chicken egg - 1 egg
  • Milk - 1 tablepoon
  • Sesame - 3 tablespoon

How to cook Turkish samsa "birds of happiness" step by step with photos


Prepare all the ingredients for the dough: flour, eggs, plain natural yogurt, olive oil, baking powder, water and dissolved salt.

Everyone has different flour, so sift 400 grams of flour into the bowl, add the rest of the ingredients and begin kneading the dough. Add the rest of the flour as you knead the dough. You may need a little more or a little less flour.

Knead the dough until it is soft and does not stick to your hands. The dough should have the consistency of an earlobe, but it should be fairly soft. Cover the dough and let it rest for about 30 minutes.

For the stuffing I took ground beef with the addition of turkey fat. You can take any minced meat to your liking. Let's add chopped onions and spices to the stuffing and mix it well. There are a lot of onions, but they will make the stuffing juicy.

Divide the rested dough into 6 equal parts. Be sure to cover the dough while working with it so it doesn't dry out.

While working with the dough, dust the work surface with flour. Take 1 piece, roll it out, then just gently stretch it with your hands. The dough is very pliable and stretches out well. It's about as thick as a sheet of paper.
