Ingredients for unusual ehpochmak:

  • Vegetable oil (for dough + as much as it takes to fry the stuffing) - 2 tablespoon
  • Water (as much as required for dough or milk) - 2 Tablespoon - 330 ml
  • Salt (for dough + as much as needed for stuffing) - 1.5 teaspoon
  • sugar (into the dough) - 1 tablespoon
  • Milk (dry, into the dough) - 2 tablespoon
  • Wheat flour / Flour (for dough + as much as needed for sprinkles and rolling) - 605 g
  • Yeast (dry, quick-acting, for dough) - 1-1,5 tablespoon
  • Butter (in the stuffing) - 50 g
  • Potatoes (medium) - 4-5 pcs
  • Champignons - 500-700 g
  • Onions (large) - 1 pc
  • Chicken breast (medium) - 1 pc
  • Hard cheese - 150 g
  • Mayonnaise (as much as needed) - 3-4 tablespoon
  • Garlic (to taste) - 1 clove
  • Broth (chicken) - 150 ml
  • Chicken egg (to grease the patties) - 1 pc
  • Sesame (optional) - 1 package.

How to cook unusual echpochmak step by step with photos

We start with the dough. I trust my bread maker - I have a Moulinex Homebread. The ingredients in the recipe are in the order of the products in my oven. For other bakeries - put in the order recommended by the manufacturer. If kneading by hand - in warm water (or milk, but then Powdered milk IS NOT ADDED), add sugar and yeast, let stand a little, then add salt, powdered milk, vegetable oil and gradually add flour. Place the dough in a warm place for about an hour and a half. During this time make two kneadings.

While the dough is being prepared or kneaded in the bread machine, prepare the filling. Boil chicken breast in salted water.

Coarsely chop mushrooms and lightly fry with onion, without adding salt (then the mushrooms will retain their flavor and aroma). Then we transfer the mushrooms to a deep dish (for convenient mixing), together with the liquid and oil.

Finely chop potatoes.

Fry the potatoes with salt (to taste) until half-ready

Pour the fried potatoes together with butter from the pan into the dish with mushrooms. Stir together. The butter and aromatic mushroom liquid will soak into the stuffing, making it juicier.

Cut the chicken breast into medium sized fibers.

Add it to the mushrooms and potatoes.

Stir well.

At this point our dough has risen.

Take it out of the bucket or a warm place and knead it a bit.

Then cut it into 1-1,5 cm slices.

Roll out the slices thinly.

Place about 1-1.5 tablespoons of the filling.

Carefully pinch the edges to make a triangle with an open middle. We will pour broth in it, so that the filling will be juicy and tender.

Put ready triangles on the baking tray lined with parchment.

We have 9 of them on the first baking tray. At this point we pour the chicken broth into a bowl and add the butter. It will melt in the warm broth.

Then we put them in a warm place - I put it in the oven at minimum temperature of 50 degrees + convection

And continue to make triangles, filling the second baking tray.

We take out the first tray with patties that have come up. Quickly put the second tray into the oven.

Brush our triangles with egg

Very carefully grease them, so that after baking they will be red on all sides

Sprinkle with sesame seeds (if desired)

Take the second tray with patties out of the oven and proceed with the same manipulations - brush with egg and sprinkle with sesame seeds. In the meantime preheat the oven to 180 degrees. While the patties are waiting for their temperature - grate the cheese, add mayonnaise (as much as the cheese will take, the mass should be easy to mix), squeeze out one clove of garlic (you can squeeze more or less - to taste). I added 1 teaspoon of dried garlic. Stir well.

Let's send the patties to bake in a preheated oven. As soon as they lightly brown, pour the broth into the middle of the triangle. Put about 1 tablespoon of broth in each pie. Then after about 5 minutes, place 1 teaspoon of the cheese-mayonnaise-garlic mixture in the middle.

Once the cheese top is slightly melted and browned - remove the baking tray from the oven and place it to cool. Bake the second tray with patties - while baking we also pour in the broth and spread the cheese.

Plate the ready cakes and serve them. I have 19 triangles.
