Vasilopita and Fanuropita

Cooked Vasilopita and Fanuropita

Nutritional Value

Two recipes for traditional Greek pies, kindly shared with me by my namesake, Larissa (papaki), a long-time resident of Greece. Vasilopita is a pie of sv. Basil, the Greek Santa Claus. In it, according to Greek tradition, they bake a coin wrapped in foil. Whoever finds a coin in his piece will be accompanied by happiness and good luck all year long. Fanuropita is a light version of Vasilopita (without milk and butter). Fanuria. Before cooking it is necessary to go to church, light a candle and pray. During the preparation make a wish and ask St. Phanuri to fulfill it. Fanuria to fulfil his wish. This cake is served to acquaintances and strangers, and when the wish comes true (and Larisa says that it will surely come true), they bake Fanuropita again as a sign of gratitude and share it with people. Two delicious cakes of happiness on New Year's Eve. Let's be happy!

How to cook vasilopita and fanuropita step by step with photos

In the ingredients is a letter "В" means Vasilopita, "Ф", respectively - Fanuropita. In order not to confuse you, in the steps I will make sure to duplicate again the amount of all the ingredients. I baked these pies in muffin tins, and my tins are small, so for the Fanuropita I took half the ingredients. The pie tin can be any shape - round, square or rectangular, like mine. Let's begin with the Vasilopita. Divide 2 eggs into whites and yolks, whip the yolks with 100g of sugar. Add melted butter (125g), whisk.

Add 1 teaspoon of baking powder to 250 g of flour, sift into a separate bowl. Add flour and 140 grams of milk one at a time to the liquid mixture, beating the dough each time.

Pour crushed toasted almonds into the dough, mix, then add whipped egg whites and again mix gently, being careful not to thoroughly mix the whites with the dough so that it becomes more fluffy and crumbly.

Pour dough into a mold, press a coin wrapped in foil into it. Bake at 180 degrees centigrade for about an hour until dry.

And here's the cut. I, naturally, could not keep the intrigue - the photo required that the coin was visible in the cut.))) Of course, it would be different for you.

The cake is very delicious - tender flaky pastry with toasted almond pieces and a crunchy crust.

Now the Fanuropita. The principle is the same. Soak raisins (0.7 cup) in a glass of liqueur or brandy (I did it with freshly squeezed orange juice, which I then added to the dough). If soaking in liquor, add it. Whisk the yolks of two eggs, 100-120 ml of orange juice, 60-70 ml of vegetable oil with a mixer for 2-3 minutes.

Sift 250g of flour with 1 teaspoon of cinnamon and 1 teaspoon of baking powder. Add flour in batches to the liquid batter, stirring each time, then add a cup of chopped walnuts and raisins, mix.

Whisk the egg whites of 2 eggs until stiff and mix into the batter from bottom to top.

Make a wish. Pour the pastry into a greased cake pan. Bake at 180g for about an hour.

I liked this cake even more than the Vasilopita. It's a very friable and spongy pastry with lots of nuts and raisins. And also grants wishes - just a dream!

Here are the last two slices. These are really good cupcakes!
