Dough

  • Chicken egg - 3 pcs
  • Sugar - 180 g
  • Milk - 150 ml
  • Vegetable oil - 100 ml
  • Vanilla sugar ("With natural bourbon vanilla" HAAS TM) - 1 sachet.
  • Salt (fine) - 1 pinch.
  • Cocoa powder - 3 tablespoon
  • Dough leavening agent (10g) - 1 sachet.
  • Wheat flour / Flour - 300 g
  • Powdered sugar ("Classic" HAAS TM for sprinkles) - 1 tablespoon

cream

  • Sugar - 70 g
  • Milk - 450 ml
  • Cream (Custard with vanilla flavor HAAS 100g) - 1 sachet.
  • Vanillin (HAAS TM) - 1 sachet.
  • Wheat flour / Flour - 2 tablespoon
  • Starch ((with a slide) of potato) - 1 tablespoon
  • Butter - 3 tablespoon
  • Chicken egg - 1 pc

How to cook cake "the riddle of the Vienna Woods" step by step with photos


Make the cream first. Mix dry custard, vanilla, flour and starch in a saucepan.

Beat with a whisk one egg and 200 ml of cold milk, pour into the dry mixture and mix well so there are no lumps.

Boil 250 ml of milk and 70 grams of sugar separately. Pour warm sweet milk in a thin stream into the cold mass, stirring vigorously with a spoon. Cook until it thickens, stirring all the time. When the cream has thickened, add the butter and let it dissolve.

The cream is quite thick, very fragrant, with a delicate vanilla flavor. Let the cream cool slightly.

Prepare the pastry: beat the eggs and sugar until it forms a thick foam. Pour in milk and vegetable oil, add a pinch of fine salt, mix together.

In a separate bowl mix flour, vanilla sugar, baking powder and cocoa powder. I took vanilla sugar "With natural bourbon vanilla" HAAS TM. It gives a special flavor to baked goods!

Pour the dry mixture into the egg and milk mixture and whisk until smooth.

Spread the pastry into a baking tin (24 cm in size) lined with oiled baking paper.

Gently pipe the cream onto the pastry in a circle. You can do it with a spoon or by squeezing the cream out of a pastry chef, as I did. Put the form in a preheated oven and bake at 180 degrees for 50-60 minutes. Baking time depends on the oven. In any case, check the readiness of the chocolate base with a toothpick in the middle.

Here we are, our mystery cake is ready! Let the cake cool well before cutting it. This is to ensure that the cream holds its shape well.

Sprinkle cooled pie with powdered sugar if desired. Warm the tea and set the table!

Without letting the cake cool completely, my housemates still begged me for a slice!

The cake turned out fragrant and very tasty - chocolate-chocolatey, with a delicate custard! It tasted so good to my family that they ordered a repeat a day later!
