It is said that there is a wedding custom of breaking a kurnik above the young couple's head at a wedding dinner and the more grains of wheat it spilled out, the more money the young family was promised. Modern housewives commonly describe kurnik as a flaky pie, but one can't really argue with that, though the history of changes in kurnik is difficult to trace. In the sources of the XVII-XVIII centuries kurnik is little mentioned, but with enviable frequency one can find a reference to fish kurnik on the festive table. Russians didn't bake kurnik with minced rice, as you can read in any modern cookbook, just because rice was practically unknown in Russia and very expensive.

Ingredients for wedding kurnik:


  • Chicken egg (1pc - for the batter, 1pc - for the pancake batter, 1-2pc - for the filling) - 3-4 pcs
  • Sour cream - 3 tablespoon
  • Milk (50ml for batter, 350ml for pancake batter, 50ml for sauce) - 450 ml
  • Wheat flour / Flour (into the dough + 5 tbsp.l. - in the pancake batter + 1 tbsp.l. - in sauce) - 400 g
  • Butter - 100 g
  • Rice (boiled) - 1 glass
  • Greens (to taste)
  • Mushrooms (white mushrooms ideally, but champignons are ok too) - 1 jar.
  • Onions (small head) - 1 pc
  • Chicken (approx.) - 300 g
  • Salt (to taste)
  • Sugar (to taste)
  • Vegetable oil
  • Black pepper (ground)

How to cook wedding kurnik step by step with photos


To begin, we need to make a good elastic dough. To make it, beat an egg with a whisk, add sour cream, butter and milk. Knead well.

Now pour in the flour and knead the dough. After that, we put it in the fridge for about 40 minutes, maybe a little more.

Now we prepare the toppings for our kurnik. The first filling will consist of rice with eggs and herbs. For this we boil the egg and the rice. Then we finely chop the egg.

Add the same egg and herbs to the rice. And of course we add salt and pepper to taste.

Let's start the second dish. Finely chop onion. And fry it in a pan.

Add the mushrooms to the onions and continue frying until they are ready. It all depends on what kind of mushrooms you have. For example, I used mushrooms, so I stewed them for a short time. And of course we should salt and pepper them if you want.

Time for the third stuffing. The chicken should be boiled and finely chopped.

Now we prepare the sauce for the chicken. Pour 1-2 tbsp. of tomato sauce on a heated pan.l. oil, add flour and milk and mix everything well. If it gets too thick, you can add a little more milk.

We add the chicken in the resulting mixture and remove from the heat.

Now it's time to do what every housewife knows how to do - it's fry pancakes. Everyone knows that you have to knead a thick dough first, and then slowly dilute it with milk.

And now fry the pancakes.

Let's go back to the main thing, ie.е. to our dough, which is already stale in the fridge. We divide it into two parts, a bigger one (because the bottom layer should be bigger) and a smaller one. Roll out the biggest piece thinly and put it on a greased baking pan.

Spread the pancake in the middle and half of the first stuffing (rice with egg and herbs) on top of it.

Lay the second pancake and half of mushrooms with onion on top of stuffing.

And again lay the pancake and half of the third filling on top of it.

Now repeat the process until we run out of pancakes or stuffing. Then roll out another layer and cover our pancakes with it.

We pinch the edges well, cut off all the surplus, and use the rest of the dough to make any decorations, whatever you can think of. After that, everything needs to be smeared with egg yolk and pierced with a knife in several places.

Here is the last step. We put our kurnik in a heated to 200 degrees oven for about 20-30 minutes.
