I read the recipe for this delicious pie in a book a few years ago. A very hearty and tasty pie, although it takes time to bake. Fans of stuffed pancakes will like it. I don't know why it's a wedding pancake. I guess the custom must have been to bake kurniki on the day of the wedding. Although there are many recipes for these pies, this is probably the most appropriate option for a wedding. I certainly do not cater weddings, I just love this pie, I just left the original name, as in the book. You should try it, it's delicious!

Ingredients for wedding kurnik:

  • Wheat flour / Flour (3 tbsp. for bread, 0.5 tbsp. for pancakes, 1 tbsp. for minced chicken.l., for minced mushrooms - 1 tsp.l.)
  • Butter ((melt) for dough - 3 tbsp.l., For the rice mixture - 1 tbsp.l., For minced chicken - 2 tbsp.l., For minced mushrooms - 1 tbsp.l.) - 7 tablespoon
  • Chicken egg (for pancakes - 1 pc, for rice stuffing - 1 pc(boiled)) - 2 units
  • Sugar (for dough - 1 tbsp.l., for pancakes - 1 tsp.l.)
  • Soda (for batter - 1/3 tsp.l., for pancakes - 0,5 tsp.l.)
  • Sour cream (for batter) - 2 tablespoon
  • Milk (0.5 tbsp. for dough, 0.5 tbsp. for pancakes) - 1 glass
  • Salt ((to taste) for dough, pancakes and stuffing)
  • rice (for minced rice) - 1/4 glass
  • Greens (any (chop) for minced rice) - 2-3 tablespoon
  • Chicken ((boiled) for minced chicken) - 500 g
  • Broth (for minced chicken - 4 tbsp.l., for minced mushrooms - 4 tbsp.l.) - 8 tablespoon
  • Mushrooms (any (fresh, canned) for minced mushrooms) - 150 g
  • Vinegar (for pancakes) - 1 tablepoon
  • Vegetable oil (for pancakes) - 5 tablespoon

How to cook kurnik wedding step by step with photos

To start with the stuffing. For the stuffing, I always take the products by eye, regardless of the recipe. Most of the time I have more filling than the recipe calls for. In this case I did the same, and just followed the recipe for the dough. To prepare the stuffed chicken: boil the meat until tender (I took the breast) and cut into small pieces. Fry the flour in the butter, add the broth. Put chicken in this sauce and simmer for 5-10 minutes.

For the stuffing we cut the mushrooms into pieces, fry them in oil and season with the same sauce as the chicken. What kind of mushrooms are needed for this stuffing, the book did not specify. I used to use canned mushrooms, but their flavor (i.e. е. I wasn't at all happy with their flavor (i.e., tasteless). If you want mushrooms, they're better raw. I had a can of uncooked mushrooms and added some dried mushrooms, before boiling them. They tasted great because they were boiled. I recommend taking either dried or fresh (frozen) mushrooms, not canned.

For the rice stuffing boil some uncooked rice porridge, add chopped hard boiled egg, herbs, oil, salt and mix together. I additionally added sweet paprika.

While the stuffing is cooling, let's make pancakes. Let's mix the eggs with sugar and salt

This is how the pancakes turned out. You need 12-15 pieces for the pie, the number depends on the size of the pie.

Now prepare the unleavened dough: stir in warm milk and salt and sugar. Then add flour and baking soda and stir quickly. Add sour cream and butter and knead the dough. The process of kneading the dough is rather peculiar, but the dough turns out good, malleable. The main thing is not to add too much flour, otherwise the dough will be rubbery.

Now divide the dough into two parts - one of which should be smaller. Roll out the smaller part and put it on a greased baking tray. On top lay a dense layer of pancakes.

Form a dome-shaped mound of minced rice

Spoon it around with pancakes on all sides.

Roll out the second pancake. Make 4 radial cuts in it and cover the top layer. Pinch the edges of the top and bottom flatbread at the bottom.

Pinch the edges of the top layer along the lines of the radial notches. Make decorations from the dough, put them on the kurnik and brush it with egg.

Place in preheated oven at 200 degrees for 40-45 minutes.
