I have to admit, I got the recipe off the Lana Shea website, but I couldn't find it on the cookbook. If anyone can find it, please let me know. I've been looking for a good whole wheat flour yeast dough recipe for a long time. This dough is suitable for pies, cakes, buns and bread. The dough should stand in the fridge for 12 hours, or better yet, for 24 hours. But I usually knead it on Wednesday night and bake it on Saturday morning. That is, I have it for a little over two days. I have not tried freezing it, but I think it is quite possible. Also, this dough is suitable for pizza, but then you have to knead it steeper, to roll out a thin flat on the pizza. This amount of dough makes 11 large pies (100g. dough per pie). You can make smaller pies, 50 grams of dough. I almost always have this dough in the refrigerator and it can keep up to 5 days. I just separate the quantity I need from it and bake scones, cakes, etc. д.

Ingredients for whole wheat flour pie dough:


  • Wheat flour / Flour (Extra Grain) - 200 g
  • Wholemeal Flour - 400 g
  • Yogurt (natural yogurt. Fat content 4-6%. No colors, sugar, etc.д.) - 400 g
  • Chicken egg - 1 pc
  • Yeast (Without the slide. Dry yeast (not fast yeast)) - 1 teaspoon
  • Cane sugar (Can be replaced with granulated sugar. Spoonful without a spoonful) - 1 teaspoon
  • Milk (2.5% fat. A little more is fine. The main thing is not fatty. + 2-3 tbsp.l. (whipping with egg yolk for grease) - 50 ml
  • Olive oil (For hands and dough) - 1 tablepoon
  • Egg yolk (For buttering the patties. Beat with milk () - 1 pc
  • Salt (1 tsp.l. in the dough and the rest in the filling (to taste)) - 1 tablespoon
  • Butter (For greasing the patties) - 30 g

Stuffing Variant

  • Chicken breast - 300 g
  • Onions (One medium onion) - 75 g
  • Greens (I use dill. But you can choose the greens and how many you like) - 0.5 bunch.
  • Garlic - 4 clove
  • Carrots - 1 pc
  • Olive oil (For frying) - 1 tablespoon

How to cook whole wheat pie dough step by step with photos

Mix yeast and sugar with warm milk and let stand for 5 minutes to activate yeast. Stir the milk thoroughly until the yeast and sugar have completely dissolved in the milk.

Add the milk to the yogurt

Add sifted wheat flour and mix everything thoroughly, it is very important that there are no lumps, the mass turns out creamy,

Add egg to the well-combined mass and again mix everything thoroughly.

Next, add whole wheat flour, salt to taste and 10 grams of olive oil. .

Mix everything thoroughly; the dough will be semi-soft and even sticky. Do not clog it with flour! Place the dough in the refrigerator, covering the bowl with clingfilm.

Pull out our dough after 12-24 hours. Prepare the filling. In a processor or meat grinder or by hand, chop the breast, carrots, onion, herbs and garlic. Stir in. Pan fry until softened about 10 minutes. Do not let the breast dry out

Divide the dough into the number of parts we want to make patties. I take about 60-70 grams per patties, not very big patties. You can make less or more. Put a towel over them so they don't get too heavy. This amount of dough and 30-40 grams of filling gives us about 170 kcal per pie.

Making patties. The dough is very soft and pliable. The seams do not come apart and the patties are easy to make. Put them with seams down on a baking sheet dusted with flour or paper. Place a towel over ready cakes and let them rise for 30 minutes. In 10-15 minutes turn on the oven and preheat it to 200 g.

Before baking brush the cakes with whipped egg yolk and milk. You can also bake them on baking paper.

Put in oven for 30-40 minutes in 200 C until golden brown. Take out and brush the pies on top. with butter. Cover with a towel and leave to cool.

Tarts on a slice. The dough is very soft and fluffy and the filling is juicy

You can also make sesame seed rolls. Make balls of dough, dip them in sesame seeds, press them a little bit inside and bake at 220°C for 20-15 minutes until golden brown. I baked these in an oven. They're good for sandwiches, burgers or any other kind of bread.
