Recipe from the book "The Gastronome School", The original source of this cake is baked with ready-made flavored cookies, but I baked the cookies myself, using aromatic spices, nuts, dried fruits and candied fruits. It's a wonderful combination of spices-nuts-chocolate. The pie tastes a lot like a chocolate sausage. Moist chocolate mass with flecks of delicious cookies. Ingredients for winter chocolate cake:

  • Dark Chocolate - 350 g
  • Butter (225 - chocolate; 120 - cookies) - 345 g
  • Chicken egg (5 - chocolate; 1 - cookie) - 6 units
  • Sugar (chocolate - 300; cookies - 75) - 375 g
  • Wheat flour / Flour - 150-170 g
  • Nuts (I have almonds, hazelnuts, cashews) - 0.75 glass
  • Dried fruits (raisins, apricots, dried cranberries) - 2 tablespoon
  • Candied fruits (ginger, cherry, cherry) - 2 tablespoon
  • Spices (cardamom, cloves, cinnamon)
  • Orange zest - 1-2 teaspoon

How to cook winter chocolate cake step by step with photos

To start baking the cookies: just crush the candied fruits (I have ginger, cherry, dried cranberries) and dried fruit (raisins, apricots), I cut them up with a knife.

Chop the nuts too, but not into flour, so that there were pieces.

Stir sugar with butter (I have brown sugar).

Add egg, flour, and knead the dough.

Add chopped nuts, dried fruit, candied fruit, orange zest and spices. I added about 0.25 teaspoon of cinnamon, 5-6 cartons of cardamom (peel and grind, you can take ready-made ground) and 3 pieces of cloves (also grind). I added candied ginger seeds, so I did not add the ground ginger.

Shape the dough into a cylinder and chill for about 40 minutes. For the last 10 minutes. put the pastry in the freezer, it cuts better afterwards.

Cut the pastry cylinder into thin slices and put it on a greased baking sheet, paper, or a pastry mat, like mine.

If you want to portion out the cake, put the slices of dough in greased ramekins.

Bake the cookies or small baskets (you may bake them with a weight on top) in a preheated oven at 170 degrees F.15-20min: 15-20min. - cookies and 10-15 minutes. - baskets. By the way, the cookies are really delicious!

Cookies cooled and broken, I had 8 pieces of cookies until this step. If we have baskets, don't touch them.

Now let's make the chocolate base. In the column "ingredients" I gave the original proportions, but I made 2/3 of a portion for my 22 cm mold. I took half the sugar, you can take even less, the cake is very sweet, but it's a matter of taste. So, with a mixer, beat the eggs and sugar into a thick, homogeneous mass for about 5 minutes.

Break the chocolate into small pieces, and melt in a water bath.

Add butter and stir until smooth.

Next, combine egg mixture and chocolate and mix gently.

Add chopped cookies and knead to combine. Pour mixture into a greased baking sheet pan. For the baskets, simply fill them with the chocolate and egg mixture almost to the brim.

Bake in preheated oven at 160 degrees. - 45 minutes. for pie and 30 minutes. - for the crust.

Here is the finished basket; by the way, my family found them more delicious than the cake itself!

Here is the finished pie. It rose nicely in the oven, but then it settled, unfortunately.. It didn't affect the taste :-) Let the cake cool and sprinkle with powdered sugar.
