Yogurt

  • Milk - 1 l
  • Sourdough starter (Oursson bacterial yogurt sourdough starter) - 1 sachet.

Pie

  • Yogurt - 250 g
  • Chicken egg - 1 pc
  • Sugar - 70 g
  • Butter - 70 g
  • Salt - 1/3 teaspoon
  • Wheat flour / Flour - 300 g
  • Yeast (dry instant yeast) - 1 teaspoon
  • Gooseberries - 100 g
  • Vanillin - 1,5 g

Candy Crumbs

  • Butter - 30 g
  • Sugar - 30 g
  • Wheat flour / Flour - 30 g

How to cook Quark Yogurt Pie with apricots step by step with photos


Prepare yogurt. Sterilize the yogurt container to make the yogurt. Pour pasteurized room temperature milk into it. (I used 3.2% fat) Pour the yogurt starter into the milk and stir it well with a clean, dry spoon until the starter has dissolved. Cover the container with a lid. Put into a yogurt thermos for 6-10 hours for the product to mature.

Chill ready yogurt. Delicious, healthy, thick, very tasty natural yogurt ready.

Pie. In a suitable bowl (large bowl, bowl) mix sugar, egg and melted, but not hot butter. Pour the yogurt into the mixture and stir with a whisk. (Use a whisk or spatula, you don't need a mixer!) The pie is moderately sweet, so those with a sweet tooth can increase the sugar by 30-35 grams.

Sift the flour and mix with salt, vanilla and yeast. Pour the flour into the liquid ingredients in batches. Knead the dough until homogeneous. (There is no need to knead the dough for a long time)

The dough comes out thick and viscous, but not as dense as the dough for regular yeast pie rolls. So you can't knead it with your hands, only with a spatula. Wrap bowl of dough in clingfilm, place in heat for 50 minutes, one hour.

Meanwhile prepare the sweet crumble. Sugar, cooled butter and flour grind with your hands or a spoon. Keep in fridge until crumble is needed.

Rinse apricots, dry with paper towel. (If the dried fruit is hard, soak it in hot water beforehand) Finely chop dried apricots. A few pieces just cut in half, they will go on decoration. Fold finely chopped apricots into the dough with a spatula.

Place the dough in a greased baking dish. The size of my mold is 22*22*5 cm. Spread dried fruit halves on top of the dough.

Take the crumb out of the fridge. Sprinkle crumbs evenly over pie surface.

Cover the cake with a napkin or towel and let it rest for 10-15 minutes. You can already turn on the oven to preheat, 180°.

Make pie in preheated oven at 180° for 35-40 minutes. Till golden brown. Always take into account the peculiarities of your technique.

Remove cake from mold, place on rack, cool. All done!
