While checking out Andy the Chef's (aka Andrey Rudkov) blog, I came across a new recipe for carrot cake. Along with fancy fancy recipes he has some wonderful, simple recipes with awesome results. Without a moment's hesitation, I baked this pie, but I confess-caramel did not come out the first time. The first time something went wrong and it rolled up into balls. The second time, I didn't change anything, but it was fine! The pie comes out with a great texture and is fragrant!. You can take spices to your liking, add, for example, cloves. The cream can be used any way, I've chosen a simple way - I mixed sour cream with powdered sugar and added a little gelatin, as sour cream turned out to be too thin. Of course, I couldn't decorate it the way Andrew did, but I tried. Thank you, Andrew for sharing your recipes and your secrets.

By popular demand I present you the recipe for the Classic Chiffon Biscuit. I apologize in advance for the quality of the photos. A little history: In 1927, Harry Baker, a Hollywood insurance salesman, invented the recipe for chiffon cupcakes (so named for their unusual tenderness and airiness). Twenty years later, in 1947, he sold his patent to "General Mills" and the chiffon cupcakes began to be produced on an industrial scale. Since these cupcakes contain liquid vegetable oil rather than solid fat, it is impossible to beat a lot of air into such an oil. Therefore, in such cakes (cupcakes) almost twice as many whites are put in relation to the yolks, which are thoroughly whipped, absorbing a lot of air (incidentally, the option of disposing of excess proteins). This air and the moisture evaporating from the dough is what lifts the cake. However, because of the decent amount of oil, we have to add baking powder - leavening agent (not baking soda! - not baking soda (not soda as there is no acid in the dough).
