One of my favorite dishes. Spicy Creole variant "Pilaf" With chicken, spicy smoked wieners and shrimp. I make it in two ways. The first is with rice (like pilaf) and the second is when I make the sauce with chicken, shrimp, and smoked sausage/sausage separately and then pour it over the rice. I like the consistency better, like riceotto. If you prefer more crumbly rice, cook it separately, then pour over the jambalaya. Enjoy! :-)
