In Sicily eggplant pasta alla norma is very popular. "Alla Norma" because this sauce is dedicated to the opera of the same name by the brilliant composer Vincenzo Bellini. The following story is told about the appearance of this recipe: when Norma was first performed onstage at La Scala, it seemed to be unappreciated, and Bellini himself was in despair. But from the next evening on, the audience began to realize that the opera was a masterpiece!!! One day, a hungry group of Norma fans, coming back from another performance, found that it was late and the restaurants had already closed, but they managed to persuade an innkeeper to feed them what was left in the kitchen. So from the leftovers of fried eggplant, tomatoes, smoked ricotta and basil they made a sauce that they called "alla Norma" after the Norma fans who had come too late.
