This dish is part of the dim sum category of Chinese snacks. There are two kinds of these cakes, called Char Siu Bau (Char Siu means pork filling, Bau means bun): steamed and baked. The steamed patties are white and fluffy, while the baked patties are darker because they are glazed. This recipe is a variation on the steamed patties. The dough on these cakes is special because it has both yeast and leavening agent in it, which makes the texture more dense and finely spongy, but soft and airy like freshly baked bread. Inside are tender slices of slow roasted pork in a sauce of honey, soy sauce and fresh ginger.
