The combination of chicken and pineapple has long been a classic, but today I propose to make chicken rolls with fresh pineapple, which makes the chicken meat even juicier and more flavorful.

Ingredients for chicken roll with pineapple and spinach:

  • Chicken fillet - 500 g
  • Marinade sauce (Teriyaki Kikkoman) - 2 tablespoon
  • Pineapple (mini) - 2 pcs
  • Spinach - 50 g
  • Bacon - 100 g
  • Black pepper (ground) - 1/4 teaspoon

How to cook chicken roll with pineapple and spinach step by step with photos

Wash pineapples.

Cut off the top and base of the pineapple. Use a sharp knife to slice off the skin (from top to bottom). Remove the black eyes (I used a vegetable peeler). Cut out the core, about 3 cm in diameter.

Rinse chicken fillets, cut into pieces and place in a blender.

Add Teriyaki Kikkoman marinade and ground pepper.


Wash spinach and put in blender.

Chop it up.

Mix spinach with two tablespoons of minced chicken and stuff the pineapple.

Spread the rest of the stuffed chicken on clingfilm.

Place the stuffed pineapple in the center.

Shape the roll.

Wrap the roll in strips of bacon and, if desired, secure with cooking thread or silicone cords. Cook in the oven, preheated to 180 degrees, for 40 minutes. Cover with foil if bacon starts to burn during cooking.
