Ingredients for pickled boiled tongue:


Boiled Tongue:

  • Beef tongue (any) - 1 kg
  • Onion - 1 pc
  • Carrots - 1 pc
  • Bay leaf - 3 pcs
  • Allspice (peas) - 7 units
  • Black pepper (peas)
  • Salt (with a slide) - 1 tablespoon
  • Water - 3 l

Pickled tongue:

  • Beef tongue (boiled) - 1 kg
  • Lemon (medium, zest + juice)
  • Vinegar (9% table) - 1 teaspoon
  • Vegetable oil - 50 ml
  • Garlic (grate) - 3 clove
  • Greens (dill + parsley) - 50 g
  • Sugar - to taste
  • Salt - to taste

How to cook pickled boiled tongue step by step with photos


Rinse the tongue well, put it in a bowl of a multicooker and pour cold water on it.

Cook on the mode - stew for 1 hour, without salt and spices.

At the end of the specified time, remove the tongue from the bowl of the cassette and drain the water. Rinse tongue and bowl well from foam, then put the tongue back into the bowl of MB and pour cold clean water, add all the spices, salt, washed onion in husks and peeled carrots.

Cook the tongue on the mode - stew for 2 hours (check readiness with a knife, if the knife goes in easily, then the tongue is ready, usually cook for about 2.5 - 3 hours).

For the tongue to be easy to clean, it should be dipped immediately after boiling in cold water and held for 5-7 minutes.

Peel from the tip of the tongue.

The broth is also very tasty, it should be strained and can be used with the carrots for a filling or a first course, but the boiled onion should be discarded.

Next, prepare the marinade: Peel and squeeze the juice from a clean lemon, wash the herbs and chop them finely. Add the rest of the ingredients to the lemon and the herbs and stir together.

Dip a piece of sliced boiled tongue into the marinade and "baste" it on both sides. Put marinated slices of tongue in stacked rows in a suitable bowl. Pour the rest of the marinade on top.

Tongue should be marinaded in a fridge in a closed container for 3 to 5 hours, but I usually leave it overnight.
