  • Chicken filet - 300 g
  • Chicken liver - 300 g
  • Chicken egg - 2 pcs
  • Cognac - 4 tablespoon
  • Sour cream - 100 g
  • Bacon (or smoked brisket) - 350 g
  • bay leaf
  • Thyme - 2 teaspoon
  • Salt - to taste
  • Black pepper (ground) - to taste
  • Garlic - 5 clove
  • Water

How to cook chicken liver and fillet terrine step by step with photos


The chicken fillets and liver should be minced through a meat grinder or chopped in a blender.

Add sour cream, 2-3 eggs, cognac, salt to taste, ground black pepper. Mix well.

We also need bacon or smoked brisket. It's best to buy bacon already cut into strips. I have a brisket, I'll cut it myself.
