Souffle "la suavité" ("Tenderness") lives up to its name. The soufflé is very tender and fluffy. Even those who do not like liver will like this dish. Soufflé is a French dish made of egg yolks mixed with various ingredients and then whipped egg whites. Can be a main dish or a sweet dessert.

Ingredients for the Chicken Liver Soufflé "Tender":


  • Carrots - 1/2 Piece
  • Chicken liver (soak) - 250 g
  • Onions - 1/3 piece
  • Milk - 150 ml
  • semolina - 7 tablespoon
  • Chicken egg (separate egg yolks and whites) - 2 pcs
  • Greens (Dill, parsley) - 1 twig.
  • Salt (To taste)
  • Nutmeg - 1 pinch.

How to cook chicken liver soufflé "Tender" step by step with photos


Grate carrots with a medium shredding drum and simmer in a saucepan with milk for about 10 minutes. During this time the kitchen fills with a delicious smell, I love it!

In a blender grind the liver and onion into a purée. Add to the milk carrots and blend.

Add the egg yolks to the mixture and whisk to combine. Then add salt to taste and a pinch of nutmeg, mix. Add 7 tablespoons of semolina, mix. Add chopped greens. The batter should come out as thick as sour cream.

Whisk egg whites with a pinch of salt until stiff and frothy.

Pour the egg whites into the liver mixture and mix gently

Pour into the moulds. Do not grease silicone ones, but grease other moulds with vegetable oil.

Place in oven heated up to 180°С for 15 minutes. Serve with any side dish or as an appetizer.

You can add vegetables to the liver - cauliflower, broccoli, replace the milk with cream or sour cream, use flour instead of semolina - it all depends on your imagination. The main thing is that the consistency should be as thick as sour cream.
