  • Vinegar - 1 teaspoon
  • Cinnamon (stick) - 1 pc
  • Allspice - 1 teaspoon
  • Badjanus - 2 bottles.
  • Laurel leaf - 1 pc
  • Chili pepper (part of a small fresh pod) - 1/3 piece

First of all we need chicken liver. Rinse chicken livers, remove fat and bad pieces.

Pour cold water and vinegar over the chicken livers. Stir and leave for 30-40 minutes.

Prepare the ingredients for the next stage: peel the garlic, peel and slice the ginger, wash the onion and cut the white part from the green. We will use only the white part, and slice each piece of white onion lengthwise.

Pour 1 liter of water into a pot and put it on the heat. Add a little dry seasoning and bring to the boil. Reduce heat to low and add everything else, except livers. Let our marinade simmer quietly for about 10 minutes

At this time, remove the livers from the water, transfer to a sieve, and place the sieve in a deep bowl. Pour steeped boiling water over the livers and leave in it for 2 minutes, t. е. Blanch the livers. This is to prevent scum from forming in the marinade when boiling.

Remove sieve with liver from water and let it drain.

Dip blanched liver into a pan with boiling marinade, bring liquid to a boil again and simmer at low boil for 15 minutes. Remove the pan from the heat, cover with a lid and let it rest overnight.
