Ingredients for the giblet roll with garlic:


  • Offal ( PWINE EAR) - 4 units
  • Pork tongue (or 1/2 of beef) - 2 units
  • Chicken Hearts (or chicken liver) - 300 g
  • Carrots - 1 pc
  • Garlic - 5 clove
  • Greens - 1 bunch.
  • Bay leaf - 2 pcs
  • Gelatin - 10 g
  • Hmeli suneli - 0.5 teaspoon
  • Salt (to taste)

How to cook tripe roll with garlic step by step with photos


Rinse and peel pork ears well. Cook on low heat in salted water with bay leaf for 2.5 hours.

After 2.5 hours put the tongues in our ears and cook for 1 more hour.

Then put chicken hearts (liver) to the pot (with lugs and tongues) and cook for 40 minutes. Peel the carrot and put it as a whole, when 40 minutes have passed, and boil it for about 20 minutes. As a result, our tongue should easily pierce with a knife, and the ears - the pulp separated from the cartilage. I used a multi-cooker-cooker, so all the processes of cooking all the by-products in my hands took 2.5 times less))))

Drain the broth and save. Put the tongues under a stream of cold water for 10 minutes. Take off the foil (skin). Cut tongues and carrots into slices. Chicken giblets - arbitrarily Chop the greens. Peel and chop garlic finely. Lay boiled ears on foil and sprinkle with garlic. Put greens on top and carrots on one side of the roll base

Spread chicken giblets and tongue slices on carrots

Sprinkle giblets with gelatin, ground pepper, salt and ginger suneli.

Roll up the roll, lifting food film by the edge, tie it with a thread along the whole length. Cook the roll in kept broth for about 20 minutes.

Cool the roll under the crust for hardening of gelatin. (I may have overdone it with the crust)))) Take off foil and cut into slices
