  • Lard (neck part) - 1.5 kg
  • Garlic (head) - 1 pc
  • Black pepper - 1 teaspoon
  • Red Hot Pepper - 1 teaspoon
  • Soy sauce - 3 tablespoon
  • Salt - 2 tablespoon
  • Bay leaf - 4 pcs
  • Mustard (cooked, spicy) - 2 tablespoon
  • Onions (You only need the husks of 6-7 bulbs, more is fine.) - 6 pcs

How to cook smoked fat at home step by step with photos

Sorry, but I did not make step by step photos (bacon was cooked at the cottage, I had no time for the session). The site has a similar recipe. But, as they say, not the right coat... So, let's proceed. We buy the neck part of the pig. This bacon is perfect for this recipe. There's meat and bacon in it. Everything you like in a composition. Take a big piece!!!

We put it in a convenient saucepan, the size corresponds to a piece of lard - a big one! Oh, I forgot... At the bottom of the pan put all the collected husks, previously washed. It's what gives the lard "smoked" . We pour water, so that our bacon would feel at ease there. Bring it to the boil. Once it boils, add a spoonful of salt. More could be added. I do not want to intrude, but I would like to remind you that no matter how much salt you put in salo, it will not take more! So don't be afraid to add too much salt! So, water has boiled, salt has been added... We boil lard on medium heat for 20-25 minutes, and we turn on the oven at 200*.

We take out, cool it down. We can simply pour out the broth or give it to pets, if any. While bacon cools down-rests after water procedures, let's make . In a bowl mix crushed garlic, pepper, soy sauce, mustard and salt. Leave a few cloves of garlic. All the ingredients "clothes" mix thoroughly. We break bay leaves in slices, cut garlic cloves (reserved) into thin slices. We make incisions in bacon with sharp knife (simply speaking we pierce bacon with knife not very deeply, but so that the garlic with laurel would fit). Put garlic and laurel in the cuts. Wrap the foil tightly around the lard, so that not a single grease does not leak out! place this precious roll on the baking tray and in the "steamy"-oven for an hour, maybe a little less. Let's see, if at the expiration of time the fat has browned, then we decrease the temperature up to 170-180°, open a little the foil and bring the fat to the finish for more 15-20 minutes. While this process lasts we suffer from excess of liquid in the mouth and rumbling in the stomach.

We wrap the lard in "diaper"-foil and let it "to breathe" to room temperature. And then in the fridge for a couple of hours. We noticed that the whole process reminds us of going to the bath house? We went for a swim, took a steam bath, and went to the snowdrift!!! And now comes the solemn moment! We take out the lard and cut it into thin slices. To its friends we add a salted cucumber and a tomato, a piece of black bread and, of course, the fighting 100 grams!!! After all, our process is the same war-fighting between the desire to snatch a piece hot and the knowledge that you have to be patient... ♪ Well, call your friends and enjoy it ♪!!!
