  • Beef liver (beef or pork - for pâté) - 600-700 g
  • Carrot (medium size - for pâté) - 1 pc
  • Onion (for pâté) - 2 pcs
  • Butter (for pâté) - 100 g
  • Chili pepper (for pâté) - 0.5 units
  • Lemon juice (for pâté) - 1 tablespoon
  • Chicken egg (for breading) - 3 units
  • Hard cheese (for breading) - 50 g
  • Turmeric (for breading) - 2 teaspoon
  • Nuts (any for stuffing)
  • Cucumber (pickled, for stuffing)

How to cook liver balls step by step with photos


Let's proceed to cooking pâté. Rinse and peel raw liver, cut into pieces. Peel and dice an onion (1 head) and carrot. Fry onion in oil, add carrot and finely chopped chili pepper. Sauté all together and add liver. Season with salt. Don't braise long. Prick liver with toothpick - if no red juice is oozing out it is time to put it out. If liver is too hot overdo it will become "rubbery".

Place stewed vegetables and liver in a food processor, Add butter and remaining 1 head of onion. Grind everything. Squeeze out the juice of the lemon.

The finished pâté is very tender and juicy. While we are preparing the breading, put the paté in the fridge to harden. The butter will harden and firmly bind all the ingredients.

Boil the eggs. Separate egg whites from egg yolks. Grate eggs, egg whites and yolks separately. Divide the grated cheese among them. Mix half of the cheese with the egg yolks and the other half with the egg whites and turmeric.
