It's no secret that frying liver often makes it dry or tough. But it's tasty, healthy and a favorite of many people. I have been making pancakes or fritters for a long time now. The meat is tender. Especially when the kids were little, they gobble it up at once! Recipes, of course, - a lot. Maybe my version is - excuse me in advance.

Ingredients for liver pancakes:

  • Wheat flour / Flour - 3-4 tablespoon
  • Kefir (or sour cream) - 100-150 g
  • Spices (salt, pepper to taste)
  • Chicken egg - 2 pcs
  • Pork liver - 600 g
  • Soy sauce (kikkoman, light) - 3-4 tablespoon
  • Vegetable oil (for frying)

How to cook liver pancakes step by step with photos

Peel and wash liver, mince with meat grinder. Add salt, pepper, kefir or sour cream, gravy and flour. Whisk or in a blender until smooth. It should be as thick as pancakes.

Fry on a hot frying pan.

Fry on both sides for 5 to 7 minutes.

Serve with any side dish or just a vegetable salad. I'm having potato croquettes and ketchup today.

The pancakes are puffy and spongy. Bon appetit!
