This appetizer of liver with cottage cheese and bell peppers will be good both hot and cold! Since the medallions are baked in the oven, you won't have to fuss over the stove. Recommended for New Year's table ;)

Ingredients for liver medallions with cottage cheese and peppers:


  • Beef liver - 250 g
  • Cheese - 125 g
  • Chicken egg - 2 pcs
  • Hard cheese - 35 g
  • Sweet red pepper - 50 g
  • Onion (0,5 pc)
  • semolina - 1 tablespoon
  • Wholemeal flour - 1 tablespoon
  • Yogurt (thick, natural) - 150 g
  • Dill (0,5 bunch)
  • Parsley (0.5 bundle)
  • Pepper mixture - to taste
  • Salt - to taste
  • Garlic - 1 clove
  • Vegetable oil - 1 tablespoon

How to cook liver medallions with cottage cheese and peppers step by step with photos


Chop onion and bell pepper finely and sauté in oil.

Finely chop liver (better if it's slightly defrosted), add cottage cheese and eggs, mix together.

Grate the cheese with the food processor and the cheese slicer attachment. ***I had semi-hard cheese, so some of the pieces rolled up into lumps, but it didn't affect the taste of the medallions in any way.

Add the cheese to the main mixture, then add cooled vegetables, semolina, flour, salt, pepper mix, minced garlic.

Mix well and leave for 10-15 minutes.

Preheat oven to 180°C. Grease muffin tins, spread mass 1-1,5 cm thickness. ***It comes to 12-15 cakes depending on diameter of muffin tin.

Bake for about 25-30 minutes until done.

For the sauce, put greens in food processor, chop them. Pour in yogurt, salt and pepper,

Whisk for a few seconds more.

Serve the medallions with the sauce.
