When I made this pie I didn't expect it to be so filling, tender and tasty all at the same time. It's so easy to make. It can be used as a snack or a main course, it can be eaten warm or cold. This pie would also decorate the holiday table. Also convenient to take for snacks and picnics.

Ingredients for the liver pie with rice and cheese:


Rice Layer

  • Rice ( Basmati Mix from "Mistral") - 100 g
  • Chicken egg - 2 pcs
  • Hard cheese - 100 g
  • Sour cream (15%) - 2 tablespoon
  • Salt
  • Sweet pepper mix (freshly ground)

Liver layer

  • Chicken liver - 500 g
  • Chicken egg - 2 pcs
  • semolina - 2 tablespoon
  • Onions - 1 pc
  • Garlic - 2 clove
  • Salt
  • Pepper mixture (freshly ground)
  • Greens (decoration)

How to cook liver pie with rice and cheese step by step with photos


For cooking we use Basmati Mix from "Mistral". Pour 1:2 water, bring to the boil and simmer for 12 minutes.

You can use any kind of liver for this pie, but I prefer chicken liver. In a food processor or a blender put the chicken liver, eggs, chopped onions, garlic, semolina. Add salt and freshly ground pepper mixture. Grind everything until smooth.

Let cool slightly, add eggs, grated hard cheese, sour cream, salt and freshly ground pepper mixtures. Stir it all up.

We take any convenient for baking form. I have a silicone one with a hole in the middle. Pour half of the liver mass.

Next layer we put the rice mass.

Then we put the rest of liver mass. We put the form into the oven heated to 220 degrees and bake for about 25-30 minutes. Check the readiness with a toothpick (it must be dry).

Turn the ready pie from the form to a plate.

Serve the pie at once warm, sliced into pieces. Serve with greens. The pie is delicious cold, though the taste is different. Enjoy your meal!
