Been making this for years. I remember the first time I made it for New Year's Eve, the guests said, "Take it away, we haven't even had a drink yet and you've already brought us something sweet. Except it didn't have any dill in it. I hope you like it too.

Ingredients for liver roll:

  • Chicken liver - 300 g
  • Chicken egg (boiled) - 4 pcs
  • Butter - 180 g
  • Saffron (flowers)
  • Salt - to taste
  • Dill (small) - 1 bunch.
  • Onion (small) - 1 pc

How to cook liver roll step by step with photos

Our Ingredients.

Slice onion and fry in 1/4 oil and add saffron blossoms. If you don't have any, you can substitute saffron, but don't overdo it. Otherwise it tastes bitter. In a blender put fried onions, egg yolks and 1/4 of butter, salt. Whisk everything well. While beating you will see that the mixture gets a beautiful yellow color, which gives us the saffron flowers.

Rinse and boil the liver, season with salt and whisk in the blender with the rest of the butter.

Spread out the cling film on a table. Spread the liver pâté into a rectangle on it in an even layer.

Top with egg mixture and dill strips around the edge.

Roll up tightly, starting with the dill side. Then twist it in one direction until the roll is flattened. Tie the ends and place in the refrigerator for a few hours, until stiff.


Best sliced before serving.
