Nutritional Value

Why "light"? Because liver itself is a dietary food, with only 125 kcal per 100 grams. Avocado, for example, has 210 kcal. One more thing: we won't use fat or lard (like in traditional cooking) when making these sausages. And, of course, a piece of these sausages will not harm our figure. Also, these light sausages are great for kids and mothers-to-be!

Ingredients for liver sausages "light":


  • Beef liver (you can have any liver you like) - 650 g
  • Corn grits (dry) - 1/2 glass
  • Onions - 1 pc
  • Vegetable oil ("Oleina") - 2 tablespoon
  • Spices (salt, pepper, nutmeg)
  • Chicken egg - 1 pc

How to cook liver sausages "light" step by step with photos


Pour oil in the frying pan "Olive oil", Slice onion and fry it lightly. Cool

Pour boiling water over corn grits (generously) and let it cool

Now we combine chopped liver, fried onion and corn grits (previously strained). Grind with a blender or put through a mincer with a fine mesh

Add egg, salt and spices to the resulting mass and mix. The mass is rather fluid, it does not look like minced meat.

Now we need some foil. Tear it into pieces (I made about 20*40 cm), and half of the sheet smeared with oil "Oleina" - so the sausages won't stick

We will need a cylindrical object. I used a wooden mallet. We put it on the foil and wrap the foil around the spatula. Naturally, we start with the place where the foil is oiled (so that this part is inside)

Wrap the foil this way and twist one side of the foil

Take out the grindstone

Put stuffing in the pile that we have made

And wrap the other end. And that's it "candy" should turn out

I have made 4 sausages of 15 cm and one of 10 cm. Put them on a baking tray and pour 1/2 cup of water on the tray. Preheat oven to a high of 250 degrees. We put the sausages in the oven. After 10 minutes we turn the temperature to 120-130 degrees and cook them for 30 minutes more. We turn off the oven and leave the sausages there for 10-15 minutes more

Sausages are delicious both hot and cold. When hot, they're a great alternative to fried liver patties. And cold - it's just a wonderful low-calorie snack!!!
