The combination of berries and by-products has long been considered a classic. This snack is made quickly and easily, and it has a very special effect.

Ingredients for liver pancake with currant jelly


Liver Pancakes

  • Chicken liver - 500 g
  • Onions (medium) - 1 pc
  • Milk - 0.5 glass
  • Salt - to taste
  • Wheat flour / Flour (with slide) - 4 tablespoon
  • Chicken Egg - 2 pcs

Jelly

  • Black currant - 0,5 glass
  • Butter - 20 g
  • Water - 100 ml
  • Sugar - 2 tablespoon
  • Mint - 2 sprigs.
  • Black pepper - 1 pinch.
  • Gelatin (instant) - 5 g

The cream

  • Black currant - 1 handful.
  • Onions - 1 pc
  • Carrots - 1 pc
  • Mayonnaise - 3 tablespoon
  • Salt - to taste
  • Garlic - 2 clove

How to cook liver cake with currant jelly step by step with photos


Put liver, onion, milk, eggs in the bowl of a food processor. Season with salt and pepper.

Beat it, add flour and whisk well again. The batter should be as thick as pancakes. The whole process took me no more than five minutes! I used the GALAXY GL2300.

Using the obtained mass, fry the liver pancakes in a heated frying pan greased with vegetable oil. Fry the pancakes on both sides for 1.5-2 minutes.

From each pancake cut out circles.

Shred onion in half rings, grate carrots on a grater.

Pan-fry onion, carrot and a handful of currants.

Place them in the GALAXY GL2300 assembly machine, add mayonnaise and garlic. Whisk until smooth.

Melt butter in a pan, add warm water and sugar, mix well. Add berries and simmer on medium heat for about 15 minutes, the mixture should be simmering constantly. Add dried mint, ground black pepper and cook for 3-5 more minutes to let the spices release their flavor.

Take off the pan from the heat, pour the mixture into a sieve and strain with a spoon to get rid of all the pulp and mint offal. Put back on the stove to heat and add the gelatin. Follow the instructions on the package of your gelatin.

Assembling our cakes. Spread our liver pancake circles with the cream.

And fill with currant jelly. Place in fridge for at least 2 hours.

Take out, decorate and serve!
