Liver soufflé

There are a lot of recipes with beef liver, mostly pates, liver cakes. I think I am not going to be original and offer my own variant of using such a useful by-product. Of course, we all understand that dishes made with (any) liver, it's up to a fan! As a rule, we make these dishes for holidays: New Year, Christmas, Easter, etc. д. This recipe has unexpected ingredients.
Ingredients for the liver souffle:

How to cook liver souffle step by step with photos

Necessary foods |

Prepare liver (clean off ducts, film), grate cabbage, carrots, (I did it in a blender). |

Separately fry carrots, cabbage and you can fry chopped onion (in this case do not add raw to the stuffing). |

Stir together all ingredients, reserving a few carrots (if desired) to coat the top. Add cream. Season with salt and pepper. Add your favorite spices if you wish. I add a little (1/2 teaspoon) nutmeg and the same amount of ginger (dry) |

Preheat oven to 190-200°. Butter the dish, put the stuffing in the dish and put it in the oven for 30 minutes. |

During this time the souffle is almost ready, we take it out of the oven, mix the delayed carrots with mayonnaise and smear the top of the souffle. Again we put in the oven for 10 minutes more. |

The soufflé is ready! Serve on toast or as an appetizer. |
