A surprisingly easy to make, budget friendly and delicious appetizer on pork abalone bread. It's basically a sandwich-like stuffing that's dense yet melt-in-your-mouth, the marble strips of skinny gristle are deliciously crunchy and look very appetizing when sliced. Although the total cooking time is two and a half hours, the actual time standing behind "machine" no more than 20 minutes.

Ingredients for the marble appetizer:


  • Byproducts (Pork ears about 1 kg) - 5 units
  • Pork tongue (not required. but it tastes better with it.) - 1 pc
  • Garlic - 6 clove
  • Mixture of peppers - 2 teaspoon
  • Bay leaf - 4 pcs
  • Sweet paprika (ground paprika) - 0.5 teaspoon
  • Salt - 1.5 tablespoon

How to cook marble appetizer step by step with photos


Wash and Clean Ears and Tongue (all by Moidodyr)). I got clean, well salted pork ears at the grocery store.

We put them in a big pot and pour cold water to cover them. Nothing but ears, tongue and water. Bring them to a boil over "high heat", Reduce to the minimum, remove the foam, cover and leave at a low boil under the lid for 60 minutes.

In the meantime peel the garlic and prepare the spices. Grind the cumin and pepper with a little salt.

After 60 minutes we add salt, bay leaves, a few cloves of garlic and ground pepper with cumin. And cook it for another 30 minutes.

Then we take out the tongue and peel it under cold water. Ears we leave on the stove to simmer for 60 minutes more. In the meantime, crush the garlic and mix it with the paprika. As the tongue cools a bit we take it apart into fibers.

After the allotted time, take out our ears and place in a deep dish or saucepan. Mix two scoops of broth with garlic and paprika. Sprinkle each layer of ears over the tongue fibers and pour over the broth.

Cover with a plate and weigh it down. I advise to put a container under the pyramid. Leftover broth in a pan carefully poured out in a plate, added the rests of garlic (well it is so... optional.). And we leave it all to harden until the morning in a cool place.

And in the morning all is ready!
