Liver Pancakes

  • Chicken liver - 700 g
  • Chicken egg (selected) - 3 pcs
  • Wheat flour / Flour - 4 tablespoon
  • Onions - 1 pc
  • Sour cream - 200 g
  • Salt - to taste
  • Pepper mixture - to taste

Stuffing

  • Cheese curd (Ricotta) - 500 g
  • Garlic - 4 clove
  • Dill - 4 sprigs.
  • Mayonnaise - 5 tablespoon
  • Corn (sugar TM EKO) - 3 tablespoon
  • Green peas (ТМ ЕКО) - 3 tablespoon
  • Gherkins (pickled delicatessen TM EKO) - 3 tablespoon
  • Sweet pepper (red) - 0.5 pcs
  • Salt - to taste

How to cook liver and vegetable cake "New Year's Eve" step by step with photos


Let's start by making liver pancakes. Prepare the necessary products. Cut liver veins out of chicken liver.

Grind liver and onion in a food processor. Add eggs, flour, sour cream and salt. Stir until smooth.

Fry the pancakes on both sides in a hot pan. I fry them without oil. The pancakes fry very quickly, it is important not to dry them out.

Stack the ready pancakes. Let them cool. I made 11 pancakes with the listed amount of ingredients. The diameter of the pan is 20 cm.

To prepare the filling. You can use any type of cottage cheese, for me it was light ricotta. Let's prepare the tins of EKO production: sweet corn, green peas, pickled gherkins. We also need dill, sweet pepper, garlic, mayonnaise and salt to taste.

Mix cottage cheese with mayonnaise, chopped dill, minced garlic and salt. Mix the cottage cheese mixture. Т. к. I'm going to have 4 kinds of filling, divide the mass into 4 parts.

Mix the curd mixture with the peas. I have 2 layers with each filling, so divide the filling into 2 parts. Do the same with the rest of the stuffing.

Mix corn and cottage cheese mixture.

Slice and mix the gherkins with the curd mixture.

Cut the bell peppers into small cubes and mix them with the curd mixture.

I find it convenient to assemble the cake in a cake pan of 20 cm in diameter. This way the cake is neater. Put a liver pancake, put half of one of the toppings on top and flatten the whole surface.

Layer up as you see fit. I have it in this order: with gherkins, with peppers, with peas, with corn. We alternate the pancakes and different types of toppings. We put a thin layer of filling if we don't want to end up with a huge wedding cake)

Do not cover the last pancake with anything. I usually put the bottom of the cake pan on top of the pancake, and put a little weight on it. I put it in the fridge for a few hours or overnight. That way the layers will be even and the cake will be well soaked.

All that's left is to decorate the liver and vegetable cake to your liking and serve it at the holiday table. I'm a real decorator, I'm sure you'll do better!
