Pickled tongue with sesame seeds

I want to offer a very tasty version of a cold beef tongue appetizer.
It's unusual, spicy, very tender, with a slight touch of sweet flavor, which complements the spiciness and sourness.

Ingredients for pickled tongue with sesame:

Beef tongue
(Boiled)

How to cook pickled tongue with sesame step by step with photos

Boil beef tongue.
I think everyone knows how to do it, but just in case, here is the recipe in full.
Pour cold water over the tongue, bring to a boil and simmer for 1 hour.

Then add 1 carrot, 1 onion, a few peas of black and white pepper, a bay leaf and cook for another 30 minutes.
Then salt and cook for another 30 minutes. Total cooking time 2 hours.

Prepare a container with cold water in advance.
Dip the boiled tongue into cold water for 30-40 seconds, take it out and skin it.

|
Cut the tongue into julienne strips, put it in a pan, add oil and sesame seeds, season with salt. Saute everything, NOT fried, but simmer on low heat for 5-7 minutes. |

Meanwhile prepare marinade.
Mix soy sauce, vinegar, honey, paprika and minced garlic.

|
Take the tongue off the fire, pour the marinade over it and stir. |
|
Put in a bowl with a tightly closed lid, cover and leave to stand for 2 to 3 hours. |
|
Place on a salad leaf or in a salad bowl, you can sprinkle with greens.
Serve as a snack, optionally spiced with horseradish or mustard.
