Pressed pig ears Zhu Er Do

A very tasty and uncommon appetizer! A traditional dish in Chinese tea houses. Cooked according to the original recipe (I'll share my impressions below... )
Ingredients for pressed pork ears "zhu er do":

How to cook pressed pork ears "chu er do" step by step with photos

Rinse and peel pig ears well, pour boiling water over them and put them into a pan. |

Pour water on the ears until they are covered. Bring them to the boil. Add chopped vegetables and ginger. |

Taste and season with salt and sugar |

Soy sauce. Cook over low heat with the lid on for about 2 hours. |
|
Then cut off the fatty part and put the ears into a container. |
|
Pour some broth and put under a press in a cold place for 6-8 hours. |
|
Serve sliced thin with soy sauce and garlic. |
