Ingredients for pressed pork ears "zhu er do":

  • Offal (Pork ears, about 1 kg) - 4 pcs
  • Onions - 1 pc
  • Carrots - 1 pc
  • Ginger (root, about cm.) - 7
  • Soy sauce - 4 tablespoon
  • Sugar (brown, lumpy) - 2 pcs
  • Cloves - 3-4 bottles.
  • Badjanus - 1 pc
  • Cinnamon (small stick) - 1 pc
  • Allspice (several peas)
  • Salt

How to cook pressed pork ears "chu er do" step by step with photos

Rinse and peel pig ears well, pour boiling water over them and put them into a pan.

Pour water on the ears until they are covered. Bring them to the boil. Add chopped vegetables and ginger.

Taste and season with salt and sugar

Soy sauce. Cook over low heat with the lid on for about 2 hours.

Then cut off the fatty part and put the ears into a container.

Pour some broth and put under a press in a cold place for 6-8 hours.

Serve sliced thin with soy sauce and garlic.
