Quite a long time ago I came across a recipe for liver stuffed in the Balkan way. The recipe made me wonder and want to try it. After trying it, I make stuffed liver regularly, improvising with toppings. It is very tasty, unusual and beautiful on the table. It always amazes and makes the guests, even those who are not too fond of liver.

Ingredients for stuffed liver:


  • Beef liver - 700 g
  • Leeks (herbs) - 1/4 pc
  • Baton - 3 slice.
  • Pine nuts - 1 handful.
  • Cheesecake - 50 g
  • Soy sauce (a spoonful each of sweet and classic sauce TM "Kikkoman") - 2 tablespoon
  • Melted butter - 20 g
  • Vegetable oil - 1 tablespoon
  • White dry wine - 50 ml
  • Sweet paprika - 1/2 teaspoon
  • Garlic (baked) - 3 clove

How to cook stuffed liver step by step with photos


Finely chop leeks and gently fry in ghee oil, without browning.

Add cubed small loaf and pine nuts and fry until browned and crusted.

Pour sweet soy sauce - I use "Kikkoman", mix and boil it.

Let cool and add lightly grated feta cheese, squeeze in a couple of cloves of roasted garlic and sprinkle with paprika. Stir. The stuffing is ready.

Take a piece of liver from the edge, take off foil and remove ducts. Slit a pocket. I have unfortunately got some large ducts inside, so I had to trim it a bit.

Fill the pocket tightly with stuffing.

Tie up liver with cooking thread in the manner of sausage. Fry the liver on all sides in vegetable oil until lightly browned.

Put in baking dish, pour soy sauce - here it is better to use classic "Kikkoman", add dry wine. Place in preheated to 180 degrees oven for about 20-25 minutes.

Turn the liver a couple of times and pour the juice over it. You should be able to tell if the liver is cooked by piercing it - the juice should be clear. When ready wrap liver in foil and let it rest before slicing 20 minutes.

Slice thinly and serve as an appetizer, or cool completely and use for sandwiches.
