Ingredients for snack "tiger serpentine":

  • Beef liver - 0,5 kg
  • Carrots (large) - 1 pc
  • Onions (in stuffing - 0,5 piece; in stuffing - 0,5 piece) - 1 pc
  • Sour cream (in stuffing) - 4 teaspoon
  • Chicken egg (in stuffing) - 1 pc
  • Butter
  • Spices (salt, pepper)
  • Nutmeg
  • Vegetable oil

How to cook appetizer "tiger serpentine" step by step with photos

Thaw and peel off all membranes. Boil liver in boiling salted water for about 10 minutes. A bay leaf can be added to the water. The heat should be low, otherwise the liver will become tough. For the same reason, don't cook it longer than ten minutes. Let the liver cool and cut it into small pieces.

Grind the liver through a meat grinder. Twice - for more tenderness. And here, if you messed up while cleaning the liver from the membranes, it will show up. As in my case :-D It's the first time I've dealt with liver, so I only peeled off the outer film, but it turns out there's some lurking inside! In general, I've changed three grates for the meat grinder :-)

Finely chop the onions. And fry in vegetable oil. Add our minced meat to it. Fry until soft. The heat must be low, so the liver does not harden. Make sure it doesn't burn. In the cooled mince for binding add 1 egg. I had a small egg. If you're afraid of raw chicken eggs, replace them with quail eggs (about 3 pieces, so that the mixture becomes elastic, but not sticky to everything). Add salt, pepper and nutmeg.

For the filling we fry chopped onion. Then add finely grated carrots. Stew. Then add 4-5 teaspoons full of sour cream. You can add less sour cream - it depends on how thick it is. The filling must not "float", but remain a thick spread. Salting. Let's cool.

Spread out the foil on a work surface. Spread stuffing from liver on it as a thin even layer. You can help yourself a little with a rolling pin greased with vegetable oil.

Spread stuffed carrot filling on it, but not right up to the edge. Rub a little butter on this "bare" edge.

Slowly, carefully begin to roll up the roll, helping yourself with the foil. Press a little on each helix to make it tight. Wrap the roll in foil and put out to cold.

Slice into portions and enjoy!
